Meal Plan Monday 3/26/18

file000738334533

Well, Bitty gave me her cooties, so I’ve been sick for the past week, hence the lack of blog updates.

I’m just posting dinners for our meal plan. The kiddos lately have been having protein pancakes (I like Kodiak Cakes mix- it’s yummy and very versatile) with butter and Peanut butter. Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes. We mix it up, and have different flavors and mix in all kinds of stuff into our shakes, so as not to get bored. Here area few of our favorite recipes.

Lunches for Lil’ Man are usually Peanut butter and crackers, fruit, milk, a protein muffin (aka a kid cupcake), and applesauce cup. He takes his lunch every day! Hubs usually has a protein shake or I pack him leftovers or a frozen entree.

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

Monday:

  • D: Chicken Soup and Grilled Cheese (I’m still tired/sick, so I’m taking it easy)

Tuesday:

  • D:Bean, Rice, cheese, and veggie bowls

Weds:

  • D: 5 way grilled cheese (that’s a grilled cheese with 5 kinds of cheese) and tomato soup

Thursday:

  • D:  Turkey Burgers on a bed of greens

Friday:

  • D: Meatballs and sauce (I’m not sure what kind, we’ve got a lot of different types in the pantry right now), steamed veggies.

Saturday:

  • D: Henry’s Birthday Party is this day, so we’ll probably eating party leftovers.

Sunday:

  • D: The time honored LEFTOVER BUFFET!

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Recipe: Colonial Chowder

stemarie_1650sfortentrance.JPGMy mom found this recipe in a local paper years ago in a column called “Making it Light”. The basic gist of the weekly article was to take crazy fat and calorie laden recipes healthy.

The problem becomes that that a lot of the changes that are made are so super drastic that the food no longer resembles the original recipe.  Since both recipes are published within the article, my mom was able to combine parts of each recipe to make something tasty and healthier than the original. I don’t have a link or a photo of the article or the original recipe, since it’s been over 20 years.

Without Further Adieu…. Colonial Chowder

Ingredients:

  • 2 T. Butter
  • 4 slices of bacon, finely diced (or you can use 1/2 cup of pre-cooked bacon crumbles)
  • 1 lb. boneless, skinless chicken breasts, cut into bite size pieces
  • 1 large yellow onions, diced
  • 4 ribs of celery, diced
  • 3 large carrots, diced
  • 3 potatoes, peeled and cut into chunks
  • 1 tsp. of each of the following: basil, oregano, thyme, sage
  •  Bay leaves (I usually use 2-3)
  • 6 cups chicken broth
  • 1.5 cup frozen corn, or 1 can rinsed and drained salt free corn kernels
  • 1 can cream-style corn
  • 1 can evaporated milk
  • Salt and Pepper to taste
Directions:
  1. In a large stock pot, melt 1 T. butter, and cook bacon.
  2. Add chicken and cook chicken until no longer pink.
  3. Add onions, and cook until translucent (about 5 minutes)
  4. Add remaining carrots, celery, potatoes, and chicken broth. Cook over medium heat, until potatoes are soft.
  5. Add both types of corn, and milk. Cook over medium/low for about 20-30 minutes.
  6. Add Salt and pepper as needed. Serve with Cheddar biscuits.

This recipe serves 8-10, freezes well, and makes great leftovers!

This recipe is naturally gluten free. It cannot be made vegetarian/vegan.

Bitty Bird has been sick for the past week and I’m hoping that it clears up soon. We’ve been cooped up into the house, and I want to take the kids to the park!

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

Monday:

  • D: Grilled Chicken and veggie skewers

Tuesday:

  • D: Frittata and fruit salad

Weds:

  • D: Colonial Chowder and cheese biscuits (I’ll be posting these recipes this week)

Thursday:

  • D: Been, Rice, cheese, and veggie bowls – Think Chipotle Bowls at home.

Friday:

  • D: Turkey Meatloaf, mashed potatoes/cauliflower, and fruit

Saturday:

  • D: Henry has been asking to go out for dinner, so maybe Souplantation (one of his favs).

Sunday:

  • D: Chef Salad/leftover buffet. I love chef salad because you can just put whatever you’ve got in the fridge in the salad.

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Why I Love… Denny’s

purple crocus

I’m serious. Stop laughing! I love Denny’s. Here is why: When you have a kid on the spectrum, a lot of stuff is about textures, sounds… the “feels”, if you will. And almost every Denny’s looks the same. The menu is the same, the food tastes the same.  So, no matter where we go, he can have something to eat he likes in a place that is familiar.

And honestly, as far as diner food goes, it’s pretty good. They have heathy choices, they have junk food, and I can get a plate of scrambled eggs and chocolate shake at 2am if I need it.

Other reasons that Denny’s is the bee’s knees:

  • They have coupons. Sign up for their rewards club here, and they’ll email you coupons frequently. They also publish coupons in the Sunday paper, and sometimes in the junk mail too- just keep your eyes peeled.
  • When you are a rewards member, you’ll get a free build your own Grand Slam on your Birthday. SWEEET! That is Henry’s favorite birthday freebie- He knows that I’ll share it with him.
  • They participate in Dosh. We get 5% back when we eat there, can I can combine that with the coupons mentioned above.
  • The four of us can have a meal there for less than $25.00 (before coupon and Dosh cash back). Frequently there are leftovers too. Can’t beat that.
  • The do have Kid’s Eat Free twice a week, but my kiddos are pretty big eaters, and I find it easier (and cheaper) to order them something from the “grown up menu”. Right now, they are obsessed with sharing the Everyday Value Slam. Henry eats the pancakes (with butter), and Bitty eats the eggs and sausage. breakfast for 2 kids for just $4…. uh, ok. And I don’t have to wash the dishes!
  • We frequent the same 3 or 4 locations and the waitresses know the kids. They are always so sweet.

This week, I am professing my love for Denny’s. What do you love this week?

Recipe: Brussels Sprouts with Caramelized Onions and Bacon!

IMG_7046.jpgBrussels Sprouts have a bad rap… Stinky, weird texture, gross. All of these things can be true if you boil them whole.

I’ve got a great recipe to share than turns our poor, stinky, vilified veggie into a tasty side dish! I made these for Thanksgiving and they were a HIT!

Brussels Sprouts with Caramelized Onions and Bacon

Serves 6-8

Ingredients:

  • 2 1/2 lbs yellow or white onions, thinly sliced
  • 4T. Butter
  •  1/4 c water or white wine
  • 2 lbs cleaned and chopped Brussels Sprouts
  • 1 lb bacon, cooked, drained, and chopped
  • Salt and Pepper as needed
  • 1/4 C shaved parmesan cheese (optional)

Directions:

IMG_7047.jpgCook the bacon- I bake mine at 350 degrees for 10-15 minutes. Then I drain it on paper towels. Once it has cooled, I take my super sharp knife and chop it up.

IMG_7045.jpgCaramelize the onions. Cook onions in butter on low for several hours, stirring occasionally. Scrape the yummy brown bits off the bottom of the pan, adding water or wine to help loosen the brown bits.

Once the onions turn a lovely brown (about 3-4 hours on low), add in the cooked chopped bacon and combine.

IMG_7051.jpgAdd in the chopped Brussels Sprouts and cook on medium for about 10-15 minutes. Season with Salt and pepper as needed. Pour into a serving dish and top with cheese.

We had this for Thanksgiving, but it also is great any time. If you end up with leftovers, it’s also great on a homemade pizza crust, topped with some extra mozzarella and parm baked at 450 for about 10-15 minutes.

Save with These Make Ahead Breakfasts!

file000369727419
Everyone loves something easy. And I like something healthy too. So when I can find food that’s easy to prep and healthy, I’m in! I love doing breakfast prep once a week. It keeps us out of the drive thru, and that helps our bottom line.

As part of the Pinterest Generation, I’ve seen and tried TONS of make ahead/batch cooked breakfasts. All with little success (not fails, really, but nothing that I’m super excited to try again or share). Here are two favorites at our house:

screen-shot-2016-09-29-at-10-22-04-pmIt seriously doesn’t get any easier!

Ingredients:

  • 2 packages of 8 count Sausage links (I used Farmer John)
  • 2 tubes 8 count biscuit dough (I scored a 2 pack at 99 Cents Only)

Directions:

  1. Cook and drain sausage links per package directions. Set aside.
  2. Preheat the oven to 350 degrees
  3. Open biscuit dough package and roll out biscuits until flat.
  4. Place sausage on flattened biscuit, roll up dough, encasing sausage.
  5. Bake for 12-15 minutes. Remove from oven and cool on wire baking rack.
  6. Once cool, store in zip top bag or container with a snap top lid. Can be stored in the fridge for up to a week, but really, they won’t last that long.

Makes 16 rolls.

Add a cuppa Joe and you’ve got a quick, filling breakfast.

And if you prefer to start your day with fruit and something rich and creamy, check out our parfait recipe (it’s seriously a no-brainer!)
screen-shot-2016-09-29-at-10-39-06-pm Inspired by my love of the McDonald’s parfaits.  I’m serious, since they changed over to Greek yogurt, my mouth waters every time I glance at the Golden Arches. You can make your own at home in just a few minutes!

I make a batch once a week! I use Ball canning jars (like these) that originally had home made jam in them (thanks Mom!), but you can use whatever jars or reusable containers you have on hand.

Ingredients:

  • 2-3 cups frozen fruit- I like berries, but feel free to use whatever is on sale or you have on hand. Skip melon, mango, banana, or pineapple- You may find them frozen, but they won’t taste very good or have a good texture in this recipe.
  • 1 large carton Vanilla Greek Yogurt (it’s about 4 cups)
  • Honey, if desired

Directions:

  1. In each container, pour in 1/4 cup yogurt.
  2. Top yogurt with 1/2 cup frozen fruit.
  3. Repeat layer of 1/4 cup yogurt. Drizzle with honey, if desired.
  4. place a few pieces of fruit on top, gently pressing down into the yogurt if needed.
  5. Screw on lid and refrigerate.

Makes 6-8, depending on sizes of jar and type of fruit used. If you need “crunchies” on your parfait, individually portion out 1 cup of cereal and stash them in the cupboard. I use the snack sized bags like these and portion out cereal, then put the portions in a tub like this one. It lives on the counter. No more cereal mysteriously being eaten in one sitting. Really, who is going to open a bunch of little bags into a big bowl and pig out?

Another tip I have for you is: Set up your coffee maker before you go to bed. For those with a classic coffee maker, it’ll just be a quick flip of the switch to get your coffee fix. We have two French Presses, I set them up at night, one I fill with cool water and steep over night to make iced coffee in the morning for myself. I prep the other with grounds and fill the Tea Kettle for a hot pot in the AM for the Mister.

I turn on the stove in the AM and in less than 10 minutes, he has a steaming cuppa Joe and I am already on my second iced coffee!

Talk back: What is your go-to frugal breakfast?

National Coffee Day, 9/29/16

imgp2367

Thursday is National Coffee Day, and while the free coffee doesn’t flow freely here in San Diego, I was able to find a few deals we can take advantage of!

Krispy Kreme- Free Coffee and a Donut. Details on their Facebook Page.

Dunkin Donuts- Not free, but 66¢ Medium-sized Hot Coffee all day. Details on their Facebook Page.

Yeah, that’s pretty much it. Starbucks and Coffee Bean and Tea Leaf aren’t doing any in-store freebies or deals.  There are other places back east, like WaWa and Pilot Flying J have free coffee offers, but they are no where near me.

screen-shot-2016-09-25-at-7-50-43-pmOh, and not this week, but October 3-9, 7-Eleven is giving away free coffee when you present their app on your phone!

Don’t you know I’ll be there every day that week!!
