Weekly Meal Plan!

Mondays are crazy around here, between my college classes, and Big Kid’s weekly social skills class, we don’t get home until late. So publishing our weekly meal plan is not a high priority after a busy day. I did write it out yesterday while I was at the Y!

This week we are focusing a lot of eating up what we’ve got on hand. There are a lot of changes afoot in my household (there will be an upcoming post, I promise). I’m focusing a lot on the kids, and trying to return to my frugal roots.

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

You may notice a lot of plant based meals- We are not vegetarian, but I am trying to get more veggies into our diet. I do a lot of cooking from scratch- I find it easier to get veggies and fruit into recipes that I can have 100% control over.

I only post our dinner plans for the week, because our other meals are usually the same each day:

Breakfast: Coffee with heavy cream for me, and pancakes or something along those lines for the kids.  I also keep sandwich ziploc bags of  other frozen fruit on hand to make the kids smoothies when they request them (a few times per week). Berries, peaches, and mangos are pretty popular.

Lunches are leftovers, salads, or soups for me and the Little Bit, and The Big Kid has a specially packed lunch of whatever he’s into at the time (which changes frequently).

For dinner, when we’ve got busy days (like Mondays), I’ll try and put something in the crockpot in the morning, or pull something I’ve already prepped out that can be quickly cooked.

  • Monday: Ramen- I’ll post pics on Instagram today. Our local Grocery Outlet had bone broth, and I used Brown Rice and Millet Ramen noodles. poached eggs, and spinach
  • Tuesday: Breakfast for Dinner- Waffles made with Kodiak Flapjack Mix and Fruit Salad
  • Wednesday: I’m going to the grocery store, so I’ll probably pick up a rotisserie chicken and a salad
  • Thursday: Leftovers
  • Friday:  I’m going out with the girls, so the kids will have Pizza!
  • Saturday: Chicken enchiladas (made from the rotisserie chicken leftovers), beans, rice, and brocolli
  • Sunday: Chicken Soup (made from the carcass of the rotisserie chicken and the remaining meat).

April is Autism Awareness Month: How You Can Help & Support Those in Your Life Touched by ASD!

ribbon-large.jpgIt’s been 3 years since our big guy was diagnosed with Autism Spectrum Disorder. We work hard each day to spread awareness and acceptance in our local community and circle of family/friends.

You or someone you know is effected by Autism, whether you know it or not.

If you are looking for more information about Autism support for you or family/friends, I recommend:

The Autism Society- They have links to local branches, where you can find local support groups for moms, dads, and siblings. Most branches have monthly meet ups and events. It’s a great way to meet parents who are in the same boat you are!

National Federation for Autism Research- Based in San Diego NFAR has many great resources, including monthly Mom and Dad meet ups, where you can have a hot meal, network with other Autism parents, and listen to a speaker. They also have a fun program for kids 2-8 called Engage & Connect at Kid Ventures in San Diego.

Easterseals also offers assistance to families with kids on the spectrum, including respite, and help for caregivers.

STORM BOY Opens Nationwide on Friday, 4/5/19!

Have you or your kids read Storm Boy? We started reading it about a week ago, and both kids are hooked. It’s really best suited for ages 10+, but my 8 year old loves stories featuring animals. It’s now a movie- starring Jai Courtney, Geoffrey Rush & Finn Little.

The Storm Boy is a wonderful book and movie about selflessness, courage, perseverance, and love. I cant wait to finish the book so we can go see the movie in theatres. Upcoming Clothing Swaps!

It’s time to start cleaning out the closets, dressers, and drawers! My favorite clothing swap is this weekend!

I love clothing swaps- it’s a great way to get gently worn clothes and other goods (I love looking for linens and new accessories), and get rid of the clothing your kids have outgrown.

The Skyline Swap is scheduled for March 30, 2019. I’ve got it in my calendar and I’ve started the bag of clothes to swap! It costs $2.00 to get in, kids under 12 are free. I have two huge bags in my garage ready to go!!

Porchlight Community is hosting a Clothing Swap on April 27th at their office in Clairemont.

And if you’ve got kids, Bethel Christian Assembly in Alpine is hosting a kids clothing, toy, and gear swap on June 8th.

And as always, here are a few other clothing resources:

Naomi’s Closet is located in Santee, and they provide clothing and toiletries to women in need.

If you are looking for a group that hosts clothing swaps more frequently, check it out the Thread Bumpin’ Meet up Group. They host a monthly swap in OB area.

And Finally, the Closet of 54th isn’t a clothing swap per se, but they do help those in need with new to them clothes. They are open once a few times each month. You can find them on Facebook.
