Meal Plan Monday 3/19/18

Bitty Bird has been sick for the past week and I’m hoping that it clears up soon. We’ve been cooped up into the house, and I want to take the kids to the park!

I’m just posting dinners for our meal plan. The kiddos lately have been having protein pancakes (I like Kodiak Cakes mix- it’s yummy and very versatile) with butter and Peanut butter. Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes. We mix it up, and have different flavors and mix in all kinds of stuff into our shakes, so as not to get bored. Here area few of our favorite recipes.

Lunches for Lil’ Man are usually Peanut butter and crackers, fruit, milk, a protein muffin (aka a kid cupcake), and applesauce cup. He takes his lunch every day! Hubs usually has a protein shake or I pack him leftovers or a frozen entree.

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

Monday:

  • D: Grilled Chicken and veggie skewers

Tuesday:

  • D: Frittata and fruit salad

Weds:

  • D: Colonial Chowder and cheese biscuits (I’ll be posting these recipes this week)

Thursday:

  • D: Been, Rice, cheese, and veggie bowls – Think Chipotle Bowls at home. 

Friday:

  • D: Turkey Meatloaf, mashed potatoes/cauliflower, and fruit

Saturday:

  • D: Henry has been asking to go out for dinner, so maybe Souplantation (one of his favs).

Sunday:

  • D: Chef Salad/leftover buffet. I love chef salad because you can just put whatever you’ve got in the fridge in the salad.

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

file000738334533.jpgSpring Break is just 2 weeks away and Henry is asking daily if it’s “Time for Spring Adventures” yet. I tell him not yet.

Even though he’s got school each day, I try and plan an adventure for him, it can be as simple as a walk at Walker Preserve or making cookies (these Justice League sugar cookies have been a recent hit).

The reason my Meal Plan Monday is so late today is that we had our daily adventure after school today. After school I treated the kids to Cheesecake Factory for cheesecake. By The Way… The pieces are HUGE. I know have three half decimated pieces of cheesecake in the fridge. We’ll be eating cheesecake for days!

  • D: roasted chicken and veggies- I’ve got tons of marinated chicken in the freezer. I’m trying new combinations of veggies and chicken roasted in the oven. Onions, carrots, celery, cherry tomatoes, potatoes, and garlic have been popular together.

Weds:

  • D: Black Bean Soup, cheese toast, and fruit salad 

Thursday:

  • D: Cheese quesadillas, beans, rice, and green salad

Friday:

  • D: Date Night

Saturday:

  • D: Family night in- Not sure yet, maybe home made pizza?

Sunday:

  • D: Chef Salad/leftover buffet. I love chef salad because you can just put whatever you’ve got in the fridge in the salad.

2/26/18 Meal Plan Monday

dsc07997The batteries in my mouse died this morning, and we spent the day running errands, and of course.. I forgot the batteries. So, on the way home from group ABA therapy (which was at Chuck E. Cheese today- Woo hoo!), we finally got batteries!

2/20/18 Meal Plan… Tuesday?

dsc07997The past two days have been CRAZY. Yesterday was a holiday, so.. no school or therapy. In the morning we hosting a rock painting and hiding event. The kids painted, played and had a great time.  Then in the afternoon, we went to an afternoon playdate at KidVentures sponsored by NFAR. Afterwards, we were hungry and pooped out from a very busy day of play, so we stopped at Denny’s!

  • D: Grilled cheese and soup ( I really want to make soup from scratch- It’s been super cold here lately). Maybe Colonial Chowder, I’ll post the recipe, whatever I choose. 

Friday:

  • D: Date Night- Probably Himalayan food, since we’ve both been craving it.

Saturday:

  • D:The kids and Daddy are having pizza, I’m going to an influencer event where there will be tasty noms.

Sunday:

  • D: Chef Salad/leftover buffet

Family Recipe: Chicken Divan

DSC02717.JPGChicken Divan is also known as chicken and broccoli casserole, but we just call it yummy at our house. You can bake it in the oven, make it on the stove top, or cook it in the crockpot.  I’ll give you all three cooking directions.

My family loves it!

The original recipe calls for rice or noodles, but I use Quinoa.

Chicken Divan

Ingredients:

  • 2 large boneless, skinless chicken breasts, cut into bite sized pieces
  • 1 small onion, chopped
  • 1 tsp butter
  • 4 cups of broccoli (Fresh or frozen, your choice)
  • 2 cups white sauce, or 1 can Progresso Recipe starters (I prefer the roasted garlic, but the mushroom is good too)
  • 3 cups cheese, divided (I like cheddar, but gruyere or swiss is good too)
  • 1 cup quinoa, rinsed or toasted (You can substitute in 1 cup uncooked white rice instead)
  • 2 cups chicken broth or water
  • 1 tsp. garlic powder
  • salt and pepper to taste

Directions:

Crockpot

  1. Saute onions in butter on the stove until softened and clear.  About 5 minutes.
  2. Place all ingredients except 1/2 c cheese, all water, and quinoa in crockpot and cook on low for 6-8 hours. add quinoa and water/broth, turn on crockpot to high for 1-2 hours, or until quinoa is cooked. Top with cheese and serve.

Stovetop:

  1. Saute onions in butter on the stove until softened and clear.  About 5 minutes.
  2. Add chicken and continue to cook until chicken is no longer pink.
  3. Add remaining ingredients except 1/2 c cheese, and cook  covered on medium/low for 15-25 minutes or until most of the liquid has been absorbed by the quinoa. Top with cheese and serve.

Oven:

  1. Saute onions in butter on the stove until softened and clear.  About 5 minutes.
  2. Add chicken and continue to cook until chicken is no longer pink. Remove from heat.
  3. Mix in remaining ingredients except 1/2 c cheese, and pour into a greased casserole dish. Bake at 350 degrees for 30-45 minutes or until most of the liquid has been absorbed by the quinoa.  Top with cheese about 10 minutes before it’s ready, and continue to bake.

Serves 6-8.

Never made white sauce? Here is a pretty basic recipe.

You can also substitute in 4 cups Winter Blend (1/2 cauliflower, 1/2 Broccoli), or another veggie that you prefer.

2/5/18 Meal Plan Monday

dsc07997The next few weeks will feature a lot of meals with chicken. Vons and Albertsons had Boneless, Skinless chicken breasts on sale for .99/lb (limit 10 lbs) on Friday. Of course, I picked up 10 lbs. I then spent an hour cutting up the meat, as it was whole breasts. I prepped 10 ziploc freezer bags, some with spices or marinade. We’ve now got 10 meals worth of meat prepped! Yes, I did use the kitchen scale to make sure that each bag was as close to 1 lb. as I could get.

Veterans Day Freebies

Veterans Day is coming up on November 11, and like most holidays, there are some great freebies available. All of these freebies are available to veterans and active duty military only, unless otherwise specified.

Free haircuts at Great Clips on Veterans Day  Active Duty and Veterans- And if you don’t need a cut that day, you can pick up a card for a free haircut card good through the end of 2017.

On Veterans Day, November 11, participating Sport Clips locations will offer free haircuts to all active duty military and veterans (with valid ID.)

Grace For Vets teams up with carwashes all over the US, Canada, New Zealand, and Australia to offer free carwashes to active duty and veterans on 11/11/17.

Looking to get away from it all? National Parks are free next weekend to commemorate Veterans Day.

Lots of places have free admission for active duty and veterans next weekend.

  • Knott’s Berry Farm
  • Aquarium of the Pacific
  • Main Event Centers (none in CA, but in tons of other states) will be giving Active Duty and Veterans Enjoy a Free Entree + $10 FUNcard as our appreciation and thanks to you!

There are countless historical monuments, museums, and historical places of significance that will be free to active duty and Veterans next weekend. It’s always worth a phone call or a quick Google search before you leave the house!

  • BJ’s Restaurant All veterans and active military can enjoy a complimentary entree under $12.95 on Friday and Saturday November 10-11/2017. Guests over age 21 will can also receive an alcoholic beverage for $6. Please present your military ID to receive this offer.
  • Red Robin All Veterans and Active Duty Military get a free dine-in Red’s Tavern Double Burger and Bottomless Steak Fries on Veterans Day 11/11.
  • Golden Corral On Monday, November 13th, 2017 from 5 PM to 9 PM, Golden Corral offers a free sit-in “thank you” dinner for Military veterans, retirees, and active duty members.

This is by no means a full list- There are tons of restaurants, bars, and pubs that honor active duty and veterans with a free meal, drink, appetizer, or dessert. Please feel free to leave one you’ve discovered in the comments below.

Quick Dinner: Beefy Taco Skillet

Ok, so pictures with this post because I didn’t think about writing it down until after we had already eaten second helpings. I didn’t think you’d want to see a pic of an empty, dirty skillet.

This recipe is inspired by what I had in the cupboard. I really wanted tacos, but we didn’t have any of the usual fixins’, so I rummaged through the cupboard and the spice rack and here is what I came up with.

If you are wondering why didn’t I just go to the store, or send the Mister…. You mst be new here! I pride myself on being able to use it up, make do, or go without. But a woman should never be denied tacos, or a reasonable facsimile.

Beefy Taco Skillet (serves 6, maybe more)

Ingredients

  • 1 lb ground meat (I used beef, but you could use your fav. ground meat)
  • 1 can condensed tomato soup +1 can of water
  • 1 small tin tomato paste
  • 1 can beans, drained and rinsed (I used Sun’s Pinto beans with Jalapeños) Pintos, Kidneys, or black beans would all be good in this recipe
  • 1 white onion, diced
  • 1 bell pepper, dices (I used red)
  • 1/2 cup mushrooms slices (I used fresh, but feel free to use canned, drained and rinsed)
  • 2 cups cooked rice (I had leftover white rice in the fridge, but feel free to use brown if you like it better)
  • 1 packet taco seasoning
  • 2 cups shredded Mexican or Sharp Cheddar Cheese
  • Sour Cream (optional topping)

 

Directions

  1. Brown meat over medium heat, breaking it apart as you cook.
  2. Add chopped veggies. Cook until onions are clear.
  3. Add beans, soup, tomato paste, and taco seasoning. Simmer 10 minutes, until well combined and bubbling.
  4. Add rice and stir to coat rice and incorporate into mixture.
  5. Top with cheese and turn to low. Cover skillet, allowing cheese to melt, about 5 minutes.
  6. Top each portion with sour cream, as desired.

Serve with Tortillas and a green salad. Despite having a whole can of soup and water in it, it is not soupy at all. Cooking it on medium really tightens it up, especially once the rice is added.

When I make this again, I will be adding more veggies: 2 onions, 3 bell peppers (one red, one green, and once yellow), and 2 cups of corn kernels (probably frozen). I may also omit the can of water and add a can of salt-free diced tomatoes in their own juice. All of these changes will add bulk to the entree without adding too many more calories.

You could also top this with crushed tortilla chips and a little chopped cilantro (I am one of those people who can’t eat cilantro- it tastes like soap and makes my tummy urpy).
