What brands can I buy at Dollar Tree?

Did you know that Dollar Tree accepts coupons? YUP! Here is their coupon policy.  While I was looking for zip ties today (for tie dying) at our local Dollar Tree, I was noticing all the great brands they have been stocking lately.

Summer Veggie & Goat Cheese Tart

PICT0097.JPGI was talking about this really amazing dish with my mom the other day, and I realized that I had not posted the recipe!

I can’t find the original recipe for this, but I was driving around the week before Independence Day, and I was listening to NPR when this recipe was discussed.

I made this tart for our 4th of July celebration, and it was gone almost instantly! I didn’t even get a photo of it after it came out of the oven.

This recipe is great with veggies fresh from the garden!

 

Oh man was it good! It’s easy to make, and you can substitute any veggies that you have in your kitchen (or garden).

Easy Summer Veggie & Goat Cheese Tart

Ingredients:

  • 1 pie crust (make it from scratch or use a mix like this one)
  • 1 4-oz. package of goat cheese, your choice of variety (I used garlic and herb) at room temperature
  • 2 medium-size RIPE tomatoes, sliced
  • 1 small zucchini, cut into thin coins
  • salt and pepper to taste

Directions:

  1. Spray a baking sheet with non-stick spray, and pre-heat over to 400 degrees.
  2. Roll out pie crust, and smooth out into a circle.
  3. Spread goat cheese in an even layer in the middle of the pie crust. Leave about 2 inches around the edges.
  4. Layer veggies over goat cheese.
  5. Fold up sides of pie crust to cover veggies- leave about a 2-inch opening in the top (see photo below).
  6. Bake for 20-30 minutes at 400 degrees or until pie crust is toasty brown.
  7. Cut into 6-8 wedges and serve. It’s yummy hot or at room temperature, but it won’t be around long enough to get cold!

Top Five Ways to Save Money as a New Parent

765500e0739c9b82c56108534584887c.jpgAhhh, kids. So cute and cuddly (and frustrating sometimes, let’s be honest), but oh my goodness, do they cost a fortune!

A few friends have recently given birth, and I shared with them my tips for saving money the first few years, so I thought I’d share them with you too!

  1. Resale shops, consignment shops, clothing swaps, and hand-me-downs are life (and budget) savers. Kids grow so fast, there is no reason that you need to break the bank buying new clothes. Most of these also have gear and toys too!
  2. Speaking of kids growing quickly, Car seats are a thing that has to be replaced too. Between September 16-30t, 2019, you can trade in an old car seat at Walmart and receive a Free $30 Walmart Gift Card to use on the purchase of a new car seat or other baby gear item. Target sometimes holds similar events.
  3. Mom support groups- Hear me out. Mommy groups get a bad wrap on social media, but it’s nice to know that there are people out there that know what you are going through. You can find mom groups via Facebook and Meetup.
  4. Free Stuff. There are so many companies that cater to parents and kids, everyone is giving away something, you just need to know where to look. Formula companies give away samples and send coupons (I won’t get into the whole debate of breastfed vs. formula fed. If you’ve read my blog long enough, you know about my struggles with IGT– FED IS BEST). Kabrita has a great offer. And as your kids get older, companies like Enfamil/Enfagrow have transitional formulas- and they offer samples and coupons too. I post freebie offers that include stuff for kids and babies each week!
  5. Stores like Walmart and Target usually run free gift bag deals when you start a registry. Right now you can order a Free Walmart Welcome Baby Registry Box when you start a registry.  Huggies has a “Made By You” free sample kit right now as well.

Family Recipe: Alaskan Meatloaf

This is my great-grandmother’s recipe. I’m not sure why it’s called Alaska meatloaf. My mom made it a lot when we were kids. It’s quick, easy, and everyone likes it!

Alaska Meatloaf
Serves 6-8
Ingredients:
  • 1 lb ground beef (you can use ground turkey is you prefer)
  • 1 egg
  • 1 small can tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 cup bread crumbs
  • 3 cups cooked rice (I like basmati)
  • 1 jar chili sauce (the stuff that’s like cocktail sauce)
  • 2 cups shredded cheese
Directions:
  1. Preheat oven to 350 degrees.
  2. Mix ground meat, egg, tomato sauce, seasoning and bread crumbs.
  3. Pat into a greased 9″ pie plate, making a meat pie “crust”.
  4. Bake for 20 minutes.
  5. In the meantime, mix cooked rice, chili sauce, and half the cheese.
  6. Heap onto the meatloaf crust and sprinkle with remaining cheese.
  7. Continue to bake until the meatloaf is done and the cheese is melted about 15-20  minutes.

Serve with a green salad or steamed veggies.

 

One Dish Option: You can add 1-2 cups of chopped veggies to the rice mixture. We like carrots, celery, bell peppers, etc.

Hiking with The Canyoneers & THE NAT!

I love exploring nature with the kids. My dad took us on hikes a lot when we were kids and it was a great way to learn more about nature and the history of San Diego.

When THE NAT emailed me this morning to share their free, guided nature hikes, I knew I had to share it with my readers!

Canyoneers are citizen scientists and volunteers who have had comprehensive training by Museum scientists and local experts on the natural history of the region. Check out the full schedule of hikes between now and June 2020, and hit the trails with the Canyoneers! Look for the Canyoneer sign at the designated parking area. We are always hoping to see wildlife. Please leave dogs at home and come enjoy nature.

The Canyoneers offer free, guided hikes on trails throughout San Diego County from September through June. The new season kicks off this Saturday, September 8 with an easy, 1-mile hike on the Kumeyaay Lake Trail at Mission Trails Regional Park, perfect for children, seniors, and birdwatchers. 

In total, the Canyoneers are offering 80 hikes. Most are offered on weekends—with a few midday hikes being offered on select dates—and cover diverse terrain, ranging from the coast to Anza-Borrego Desert State Park, and from the Tijuana Estuary to Palomar Mountain.

  • New hikes in Cleveland National Forest, Anza-Borrego Desert State Park, and several other locations including Gremlin Way Trailhead in Dictionary Hill Open Space Preserve. 
  • Once a month, the Canyoneers will lead a mid-week hike to locations that are often crowded on weekends due to limited access. Examples include Equestrian Trail in Elfin Forest Recreational Reserve (November 13) and Luelf Pond Preserve in Ramona (May 12). 
  • The desert hikes that are scheduled on consecutive days allow for camping opportunities, reducing the amount of driving necessary to get to both hikes. The desert at night is a special treat. 
  • Some trails offer shorter hikes with little elevation change—good for younger hikers—and some very flat and paved hikes that are perfect for strollers and anyone with a disability. One example is the Batiquitos Lagoon Gabbiano Trailhead (September 14). 
  • If the weather cooperates, there’s a chance to see waterfalls on Cibbets Flat to Kitchen Creek Falls hike (February 9) and the Green Valley Falls Loop (June 28). Green Valley Falls is an amazing hike and has pools of water that are fun to play in!
  • Hikes in some of the most interesting geological areas in Anza-Borrego Desert State Park, including Fish Creek/Split Mountain (January 4) and Canyon Sin Nombre (February 8)—perfect for slot canyon fans. 

And if you have kids, there is a special program for students and classes too!

“Kids are most inspired by nature when they get outside and experience it for themselves—seeing a Monarch butterfly or a coast live oak in person helps bring to life what they’re learning in the classroom,” said Judy Gradwohl, president and CEO of the San Diego Natural History Museum. 

The program is made possible with support from Subaru of America, who is generously supporting the Canyoneer hiking program for the fourth year in a row.

New Recipe: Shakshuka!

Shakshuska is an incredibly easy vegetarian recipe! It’s high in flavor and protein. Most of the ingredients can be found in any kitchen.

We’ve been enjoying it for a few years, and I can’t believe I’ve never posted the recipe! My recipe is based on the NYT recipe found here.

Ingredients:

  • 2 T. Oil (I usually use olive oil, but grape seed oil is great too)
  • 1 large onion, chopped
  • 1 large bell pepper, sliced
  • 3 garlic cloves, diced (sometimes I use the chopped garlic in the jar)
  • 1 teaspoon each ground cumin and sweet paprika
  • Dash of cayenne, or to taste
  • 28 ounces of canned whole plum tomatoes with juices, coarsely chopped (I usually use 2
  • 14-ish ounce cans, as they are cheaper/easier to find)
  • 1 small can tomato paste
  • Salt & Pepper to taste
  • 1 1/4 cup feta cheese, crumbled
  • 6-8 large eggs

Directions:

  1. Preheat oven to 350 degrees
  2. In a large, ovenproof skillet (I use one like this), heat oil, and saute onion and peppers until soft and onions are clear about 10 minutes.
  3. Add garlic and cook until fragrant.
  4. Add spices, canned tomatoes, and tomato paste, cook over low for 10-15 minutes until sauce is thick and bubbly.
  5. Stir in about half the feta, and cook until combined/melted.
  6. Turn off the stove.
  7. Crack eggs into sauce, top with remaining feta and bake in the oven for 6-10 minutes or until eggs are done to your liking.
  8. Season with salt and pepper as needed. Serve with crusty hot bread, and a green salad.

Dietary/Allergy Note: There is no way to make this recipe vegan, but it is naturally Gluten-Free!
