Italian Meatball Soup Recipe

I posted about this soup earlier in the week on Instagram. It’s easy to make and is super filling. The best part is that you can make it as simple or elevated as you want, and as your budget allows

If you like to make everything from scratch, make your own meatballs and tomato soup. On a financial or time budget- use premade. I double-checked and all ingredients are available at Dollar Tree, so even the tightest budget can try it!

Italian Meatball Soup

Ingredients:

  • 8-12 meatballs (I used these Smithfield Power Bites)
  • 1 can/jar Tomato Basil Soup (I used Rao)
  • 1 14.5oz can salt-free diced tomatoes
  • 6 Oz (half of a 12 oz. bag) frozen onion and pepper blend (I used my slap chopper to make the onions and peppers much smaller pieces)
  • 1T butter or oil
  • 1T minced garlic
  • 2T chopped sun-dried tomatoes and 1T of the oil
  • 1c. pasta shape of your choice (I used medium shells)
  • 1 bay leaf
  • parmesan cheese

Directions:

  1. In a deep pot, warm oil and saute the frozen onion and pepper until the onions are translucent and fragrant about 10-15 minutes.
  2. Add in garlic, and sundried tomatoes and it’s oil and stir frequently, until garlic is fragrant.
  3. Add in the soup, bay leaf, meatballs (mine were frozen), and canned tomatoes.
  4. Allow soup to cook covered on medium/low for 15-20 minutes, stirring occasionally.
  5. Pour uncooked pasta into soup, turn to low, and cover again. cook on low for about 10 minutes. Remove bay leaf and serve.
  6. Top each serving with parmesan cheese as desired.

This recipe makes 4-6 servings. It can be easily doubled or tripled.

Tips:

  • It freezes well also.
  • It can be made vegan or vegetarian. Use vegan/vegetarian meatballs and soup.
  • GLUTEN FREE: Substitute GF Meatballs and Pasta

9/4/2023 Weekly Meal Plan

0a5e9dab796cea8a07eabe4eb4795b9e.jpgThis long holiday weekend has been chill. We swam, deep cleaned bedrooms, and did our weekly reset. We reset today, and the extra day off was really needed. Back to school hit us hard.

I made big batches of vegetarian chili and chicken noodle soup yesterday for this week and beyond. I put a quart of each in the freezer for later.

The freezer and fridge are organized and the meals are planned for the upcoming week and beyond.

Our Yasukochi Family Farms  CSA box is delivered on Mondays. It arrived about 2:30 today, and I was ready to dive in and get prepping!

We’ve been trying a lot of new foods lately, thanks to the really great freebies from Social Nature too. It’s fun to try new foods.

For those of you who are new to meal planning, I’ve got an easy 101-style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

I’ve gotten a pretty good inventory of the pantry, freezer, and fridge (I try to update it after every shopping trip), so I’m able to plan meals and use up what we’ve got with little waste.

I only post our dinner plans for the week, because our other meals are usually the same each day.

Breakfast: Coffee with 1/2 and 1/2  for me, and a Cliff Bar, fruit, and bagels for the littlest kiddo. The big kid has protein shakes in the morning. This is his favorite kind.

Lunch: I have a plastic tote in the cupboard full of self-serve snacks. I buy treats and snacks in bulk and fill up snack-sized zip-top bags. The big kid brings his lunch every day (The same thing every day), and the little one buys her lunch about half the time.

Dinner: I’m making sure to start our meals with lots of veggies. With the rising costs of meat, we get most of our protein from using meat as an addition to our meals, not the main component. I realize this may not work for all families, but it helps us immensely.

  • Sunday: Chicken noodle soup, green salad, cheese toast
  • Monday: Chef Salad or protein shakes (big kid isn’t a big salad fan), and fruit
  • Tuesday:  blistered tomatoes w/ pasta, garlic bread (recipe forthcoming)

  • Wednesday: Vegetarian Chili, cornbread, fruit salad

  • Thursday: Protein shakes and fruit trays

  • Friday: Takeout night
  • Saturday:  Leftover night

Recent Kitchen Glow-up on a Budget!

We didn’t end up doing a staycation this summer. Between Summer School and the overall unbearable heat that the southwest has been experiencing, I haven’t really wanted to drag two kids that are sensitive to heat out to “have fun”.

Because of that, I’ve decided to make some small cosmetic changes and upgrades to the kitchen- and the bedrooms too. This post is just covering the kitchen.

Our overhead fluorescent kitchen lights are starting to out. The ballasts are old, and while I’m saving up to have the kitchen lights redone, I needed a little something more. I landed on magnetic, rechargeable under the cabinet lights. I looked online all over, read reviews, and decided to give Temu a try.

I’m sure that you’ve seen advertisements all over for Temu. It’s similar to Ali Express and Amazon combined. Smaller international companies sell their goods on Temu. Shipping is pretty quick, usually less than 2 weeks.

I also picked up a few other things for the kitchen that I had on my “need in the kitchen sometime”. This included:

Plastic Garbage Bag Clips– These keep the trash bag from sliding into the can. If you got kids, these are perfect.

Aluminum Foil Square Stove Burner Covers  I usually buy them on Amazon, but this price and quantity were much better.

Dishwasher Magnet Clean Dirty Sign– We had a flippable magnet for years, but it was really hard to get off. This sliding magnet is much easier.

Refrigerator shelf liners– I love these and have wanted some for years. I finally bit the bullet and both sets for the freezer and fridge.

After falling down the rabbit hole of Temu, I switched over to a few other sites- JCP, Target, and Amazon for the other things I needed.

My kitchen canister set was janky. It was at least 11 years old. I got it for Xmas when the biggest kid was a baby. Several of the lids were cracked, and the remaining lids were not able to be cleaned properly.

I did a lot of research online, I looked at 4 or 5 sites, read reviews, and watched videos. I didn’t want glass ones again, and I wanted snap-on lids. So much easier to clean, and easier to stack.  Based on my kitchen size and how much I needed to store, I opted for the 14-piece Airtight Food Storage Containers with Snap-On Lids.

I switched over all of the canisters, and I also poured some other frequently used foods into canisters to be stored on the shelf where I keep our coffee and protein shakes supplies.

The remaining containers I used to store rice, pasta, and some other misc. snacks in the pantry. These all fit really well in our pantry, and yes, it’s all still organized like I did here.

I also bought new kitchen rugs to replace the older ones, and a couple packs of kitchen towels in white (they are easier to keep clean).

While I was doing all of this, I was cleaning out the cupboards and got rid of broken, chipped dishes, unwanted mugs, and extra kitchen stuff. I also ordered new dishes, but they haven’t arrived yet.  Once the new dishes arrive, the remaining old Rachel Ray/Albertsons dishes from the mid-2010’s will be donated.

Now I’m sure y’all are thinking, “How did she pay for all of this??” I worked my “hustles” and saved up Amazon Gift cards by doing surveys (I post opportunities weekly), used my cashback apps, cashed out as soon as I was able to with all of them, and stashed the money in my savings account. All in, I ended up paying $18.51 out of pocket, and that was for the kitchen towels that I bought at Ross.

It’s not new cabinets and new flooring (Cabinets were painted and flooring was replaced last year as part of our water loss), but it’s the little things that make our homes more comfortable!

Beating the Summer Heat Without Breaking the Bank!

The past few weeks here in Southern California have had some very high temperatures, and it reminds me that we could all use a brush up on our frugal ways to beat the heat.

First of all, if you live in San Diego County check out the cool zone website to find a free place near you to chill out. They are typically places like community centers, libraries, and indoor shopping centers. If you are outside San Diego County, here is a list of all of the California counties and their cool zone sites.

In addition to finding certified cool zones, you can head to cooler areas like the beach, a local swimming pool, or a splash pad. Most beaches have free parking, although state beaches have a nominal fee to park. Community pools and splash pads also have a small admittance fee, although parking is generally free.

Remember to dress for the weather, and that includes floppy hats with wide brims that will keep your head and neck covered, as well as sunscreen if you were going to be outside between the hours of 10 AM-4 PM. Hydration is also very important if you’re gonna be outside in the heat. Water bottles, ice cubes, and frozen packs are all on my summer adventure packing list.

And now finally cooling down your home. We’ve only had a decent AC in our home for two years, prior to that we had the original from when our home with built in the early 80s. We cool our home down by having box fans in the windows each night, and we close the house by 10 AM to keep the cool air inside. We close our blinds and drapes, and we keep the fans going inside the house to circulate the air. We set our thermostat to between 74 and 76°. And because we have a newer AC we use the smart program (it’s an app) that communicates with our thermostat.

This is super important especially if you live in an area where there are wildfires: Set a reminder in your phone or online calendar to change the air filter on your AC once a year or more if you have a wildfire in your area and you’re running the AC. We take advantage of programs like OhmConnect and programs through our local power company (SDG&E). There are programs like FERA, and the Care program that offers discounts off the electric portion of your power bill.  These programs are for lower-income families, or families who need electricity for medical devices.

I make approximately 12 trays of ice cubes each day (are in-freezer icemaker broke about two years ago, and it cost more than a new refrigerator to get it fixed), and we drink a lot of ice water, ice tea, and iced sugar-free beverages daily during the summer. This is the kid’s current obsession. They like it because they can make it themselves in their personal water bottles without any help from mom.

I have become the master at packing weather-appropriate drinks and snacks for when we are on the go when school is out.

Remember that you can increase your water intake by consuming water-rich fruits and vegetables as well. Melons and cucumbers are just two sources of hydration that can also satiate your hunger. Our weekly CSA boxes have been coming with all sorts of delicious cucumbers (both Persian and English) and a variety of melons. I cut them up and stash them in the fridge so the kids can always have a quick, easy snack.
