Family Recipe: Bread Bowl Cheese Dip

This recipe is perfect for potlucks, parties, basically any time you want to eat cheesy dip from a bread boule.

It’s been in the family for years. At least 25.

 

It is not healthy. It is not low sodium. This is a sometimes food for sure.

Bread Bowl

Serves 10-12 as an appetizer

Ingredients:

  • 1 15 oz jar Cheese Whiz (It has to be cheez whiz)
  • 10 slices Hormel Dried Beef
  • 1 bunch green onions
  • 1 brick cream cheese
  • 8 oz sour cream
  • 1 bread boule (I like sourdough, but whatever you enjoy)

Directions:

  1. To prepare the bread bowl, cut a shallow square at the top of the bread. Pull it off in one piece, reserve. Pull out the soft interior of the bread until there is a decent-sized cavity. Tear the “guts” of the bread that you pulled out into bite-size pieces. Do the same with the under/soft side of the square piece that was cut off. This is now the “lid” to the bowl.
  2. On a foil-lined baking tray, scatter your little bread “guts”. these will be heated up and used to scoop the dip up.
  3. Rinse the dried beef very well. It is very salty. Once it has been rinsed and patted dry (I use a paper towel), cut into bite-sized pieces. I prefer mine to be smaller than a penny.
  4. Rinse the green onions and slice. I usually use the bottom 1/4-1/2 of each, discarding the very white end part with the roots (ick).
  5. In a medium-sized mixing bowl, combine cream cheese, sour cream, cheez whiz. Fold in the dried beef and green onions.
  6. Pour mixture into the bread bowl cavity, top with the bread lid. Wrap in tin foil, place on a baking tray, and bake at 350 for 30-45 minutes.
  7. After the initial baking time, unwrap, remove the lid of the bowl and bake for another 15 minutes.
  8. During the last 5 minutes of baking, place the tray of small torn bread pieces in the oven to crisp up.
  9. Serve bread bowl HOT with torn bread pieces, crackers, cocktail bread, crudities, whatever appeals to you.

For my family, the best part is tearing off pieces of the bowl to eat once most of the interior dip has been eaten.

Bread Bowl makes a great dish for THE BIG GAME, which is this coming Sunday.

Hearty Green Goddess Salad

I love Green Goddess Salad Dressing. For those who aren’t familiar with Green Goddess Dressing, per wikipedia: Green goddess is a salad dressing, typically containing mayonnaise, sour cream, chervil, chives, anchovy, tarragon, lemon juice, and pepper.

A few months ago, I found some vegan Green Goddess Dressing– I like it because it gets its creaminess from avocado instead of mayo and sour cream, and it lasts a bit longer in the fridge.

I love making hearty salads that can withstand a few days in the fridge. It’s a great way to make sure you have yummy veggies on hand for a snack or to add to meal time.

Hearty Green Goddess Salad

Ingredients:

  • 3 Persian cucumbers, cut into bite-sized pieces
  • 1 dry pint cherry or grape tomatoes, halved
  • 1 bell pepper, chopped (I used a red one, but whatever color you have works)
  • 2 ribs of celery, diced
  • 1 carrot, peeled and chopped into bite-size pieces
  • 1/4 cup Green Goddess Dressing (I like Gotham Greens)

Directions:

  • In a bowl, mix all ingredients.
  • Store in the fridge overnight to allow flavors to mingle.
  • Serve as is, or top a bed of green.

Serves 3-5.

12/20/2021 Weekly Meal Plan (Holiday Edition)

I did some cooking (and cleaning) yesterday. I’ve got some tasty treats coming up this week, including Christmas Eve Pizza!

We’ve been trying a lot of new foods lately, thanks to the really great freebies from Social Nature lately too. It’s fun to try new foods.

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

I’ve gotten a pretty good inventory of the pantry, freezer, and fridge done (I try to update it after every shopping trip), so I’m able to plan meals and use up what we’ve got with little waste. If you are looking for a kitchen inventory printable, I have made my own and you can find them for sale here on my Etsy Store.

I only post our dinner plans for the week, because our other meals are usually the same each day.

Breakfast: Coffee with 1/2 and 1/2  for me, and pancakes or something along those lines for the kids. They are also into fruit and bagels for breakfast. The Ancient Grain bagels from Einstein Bros. are the current family favorite. I pick them up on Mondays when a dozen is only $7. I slice them and freeze them to keep them from going bad too quickly.

Lunch: I have a plastic tote in the cupboard full of self-serve snacks. I buy treats and snacks in bulk and fill up snack-sized zip-top bags. I’m back to packing lunches again. However, school lunches are free this year- Little Bit has been buying her lunch and expanding her palate.

Dinner: I’ve got some tasty (and quick) meals planned for this week!

  • Monday: Nuggets, fresh fruit, noodles, or cheese toast 
  • Tuesday: Chicken enchilada casserole
  • Wednesday: Roasted Veggie Soup, popovers with butter
  • Thursday:  breakfast burritos, hashbrowns, fruit salad
  • Friday: Christmas Eve Pizza!
  • Saturday:  Early dinner with my mom (dad is still in the hospital, prayers are welcome)
  • Sunday: Leftover Fiesta

12/13/2021 Weekly Meal Plan

0a5e9dab796cea8a07eabe4eb4795b9e.jpgThis past weekend was BUSY! I haven’t had a chance to go to the store, but I think we’ll be able to stretch it for a few more days until I have some free time. This week is looking busy too. Little Bit gets her casts off Wednesday after school- Hooray!

I did some cooking yesterday- I made some side dishes, including Roasted veggies, Rice a Roni. I made lunches for the adults, and re-organized the lunch/snack basket for the kids in the pantry. I also used up some of the wilting fruit to make some zipsicle style popsicles (strawberry and banana, and pineapple). And I made cookies!

Since this week is so busy, we’ll be having a lot of quick-prep dinners, or we’ll be relying on the foods I prepped yesterday.

  • Wednesday:  Waffles or Pancakes (kids choice), Fruit, Eggs- And maybe Beyond Meat sausages
  • Thursday:   Bean, Rice, Cheese, and Roasted Veggie bowls
  • Friday: take out (Usually pizza and Chinese food)
  • Saturday:  Leftovers
  • Sunday: Fritatta, Salad

Easy Hummus Recipe!

Yesterday in my tabouli recipe, I mentioned I’d be sharing a hummus recipe soon. Here we are!

This recipe is super easy, and you can pick up all the ingredients in any grocery store, on Amazon, or even at Target.

Ingredients:

  • 2 15.5 oz canned chickpeas (garbanzo beans), drained and rinsed
  • 1/2 cup tahini (I like Tumeric Tahini from Havens Kitchen)
  • 1/4 cup lemon juice
  • 1 clove garlic, chopped (or you can use 1 teaspoon chopped jarred garlic)
  • 2 tablespoons olive oil
  • 1/2 t. cumin
  • salt to taste
  • Garnishes (optional): additional olive oil, everything but the bagel seasoning, toasted sesame seeds, a sprinkle of cumin, sumac, chopped parsley)

Directions:

  1. In a food processor/blender, blend all of the ingredients (except the garnishes)
  2. If the hummus is too thick, add 1 teaspoon of water and blend again. repeat as needed, adding up to 3 teaspoons of water.
  3. Refrigerate overnight to allow flavors to meld.
  4. Pour into a bowl, top with 1 tablespoon olive oil, and any other additional garnishes as needed.
  5. Serve with veggies, pita, or chips/crackers.

This recipe is vegan, and gluten-free.
