Sooo, I wrote this post yesterday, and forgot to hit PUBLISH.. So a day late, but I’ve got all kinds of tasty stuff planned for this week, and some recipes will be added later this week as well.

I did a bunch of prep work on Sunday for a few hours- I made 3 batches of pizza dough, cooked a tri-tip, and I was going to start turkey chili, but instead, I made cookies (which are excellent, and I’ll post  the recipe tomorrow). You can see the pics on my Instagram feed.

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

You may notice a lot of plant based meals- We are not vegetarian, but I am trying to get more veggies into our diet. I do a lot of cooking from scratch- I find it easier to get veggies and fruit into recipes that I can have 100% control over.

I only post our dinner plans for the week, because our other meals are usually the same each day:

Breakfast: Protein shakes for grown ups, and pancakes or something along those lines for the kids. We have plenty of protein shake fixins’- I buy the over ripe bananas, peel and slice them pop them into ziploc bags, and freeze them for smoothies and protein shakes. I also keep sandwich ziploc bags of  other frozen fruit on hand to make the kids smoothies when they request them (a few times per week). Berries, peaches, and mangos are pretty popular.

Lunches are leftovers, salads, or a protein shake for me and the Mister, and The Big Kid has a specially packed lunch of whatever he’s into at the time (which changes frequently). Bitty Bird eats whatever I’ll feed her.

For dinner, when we’ve got busy days (like Mondays), I’ll try and put something in the crockpot in the morning, or pull something I’ve already prepped out that can be quickly cooked.

  • Monday: We Chinese food. Mr. Husband stopped on the way home and picked it up!
  • Tuesday: Breakfast for Dinner: Hash browns with cheese, bacon or leftover tri-tip, and guacamole, topped with a poached egg.
  • Wednesday: Pizza Night!
  • Thursday: Turkey Chili and cornbread
  • Friday:  Date Night (dinner out, but I’m not sure where)
  • Saturday: Chicken Divan (it’s a one pan meal)
  • Sunday:  Leftovers

Recipe: Stuffed Squash

This is a very hearty dish! Perfect for cold winter nights!

On Sunday, we made dinner for a friend. She’s a vegetarian, and we wanted to make something hearty, filling and nutritious. After searching for a few stuffed squash recipes, and hitting up the grocery store, I picked up a butternut squash. Originally I wanted a acorn squash, but most of the stores were wiped out from Thanksgiving.

We chose ingredients that were healthy and worked well together. This recipe is naturally vegan and Gluten free. There is an option to top the squash with poached eggs, if you want a little more protein.

This recipe is a little more work than my usual fare, but it’s really tasty and makes A LOT.  To save time I used one of the bags of Mirepoix (pronounced meer pwah)I had prepped and froze last week. If you don’t do prep cooking, check your local grocery store freezer case for frozen mirepoix.

I get all of my spices from Penzey’s. They have 67 stores across the country, and you can order from their website too. They frequently have coupon codes for free samples or shipping when you place an order- It’s worth a google search!

You can serve this as a main dish or a side.

Stuffed Squash

Ingredients:

  • 1 large butternut squash
  • 1 T. Olive Oil
  • 2 cups vegetable broth
  • 2 T. Butter
  • 2 small Granny Smith Apples, cored and chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cups onion, diced (I used a sweet onion)
  • 1 can garbanzo beans, drained and rinsed (15 ounce can approx.)
  • 1 ounce pouch of Juicy Gems dried pomegranate arils
  • Salt
  • Pepper
  • 1 tsp. French Tarragon
  • 1 tsp. Rubbed Sage
  • 1 tsp. French Thyme
  • 1 Bay Leaf
  • 1 T. Air Dried Shallots

Directions:

  1. Cut Squash in half, remove seeds/membrane. Brush with oil, salt and pepper.
  2. Bake at 425 for 30-45 minutes, until squash is fork tender.
  3. While squash is cooking, In a large pan, melt butter, and saute fruit, veggies, and spices/herbs. Cook over low heat for about 20-30 minutes. Add garbanzo beans, arils, and broth. Cook for another 20-30 minutes or so, or until broth is mostly absorbed and garbanzos are tender.
  4. As the stuffing cooks, once the squash is cool enough to handle, scoop out about 1/3 of the squash. You want to create a cavity for the stuffing. Set the “guts”  aside- You can chop it up and add it to the stuffing, or serve it on the side (I just ate it with butter while the stuffed squash cooked).
  5. Place the squash halves on a baking sheet, and fill the cavities with the veggie stuffing. Top with more salt and pepper, as needed.
  6. Bake at 350 for 20-30 minutes. Serves 4 as a main dish, 6-8 as a side dish. For added protein when served as a main dish, top each portion with a poached egg. Not sure how to poach an egg? Alton Brown has a great tutorial here.

Review- The Camp & Cabin Cookbook: 100 Recipes to Prepare Wherever You Go

Screen Shot 2018-06-07 at 10.13.47 PM.pngWe are big into outdoor cooking: Grilling, Dutch oven cooking, heck, even sometimes cooking over fire (ok, so that’s usually just s’mores, but that’s cooking, right?). When Laura Bashar, the author of The Camp & Cabin Cookbook: 100 Recipes to Prepare Wherever You Go offered me copy of her book for review, I jumped at the chance!

If you’ve never cooked in a Dutch Oven or over coals, Laura gives you the primer! She goes over all the deets: How many coals you need to achieve specific cooking temps, various cooking techniques (over flame, over coals), and how to translate the recipes to be cooked indoors (just in case you want to try these awesome recipes and aren’t planning on camping any time soon).

The recipes are easy to follow and follow you through the day: Breakfast, lunch, appetizers, dinner, desserts, and even side dishes. And it’s not just the typical camping food, there are recipes for the kinds of food you eat at at home! Just because you aren’t at home, doesn’t mean you have to live off of hot dogs, Dinty Moore canned stew, and cold cereal.

My family poured over this cookbook during our last camping trip and we have planed an outdoor cooking afternoon to try out a lot of these recipes in the coming weeks. Check my Insta Feed in the coming weeks for pics of some of the dishes we create.

There are no Duck Donuts locations in CA yet, but it looks like they are all over the East Coast…  Enjoy a FREE Classic Duck Donut on June 1, 2018 including cinnamon sugar, powdered sugar or bare. NO purchase is required!

Meal Plan Monday 3/26/18

Well, Bitty gave me her cooties, so I’ve been sick for the past week, hence the lack of blog updates.

I’m just posting dinners for our meal plan. The kiddos lately have been having protein pancakes (I like Kodiak Cakes mix- it’s yummy and very versatile) with butter and Peanut butter. Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes. We mix it up, and have different flavors and mix in all kinds of stuff into our shakes, so as not to get bored. Here area few of our favorite recipes.

Lunches for Lil’ Man are usually Peanut butter and crackers, fruit, milk, a protein muffin (aka a kid cupcake), and applesauce cup. He takes his lunch every day! Hubs usually has a protein shake or I pack him leftovers or a frozen entree.

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

Monday:

  • D: Chicken Soup and Grilled Cheese (I’m still tired/sick, so I’m taking it easy)

Tuesday:

  • D:Bean, Rice, cheese, and veggie bowls

Weds:

  • D: 5 way grilled cheese (that’s a grilled cheese with 5 kinds of cheese) and tomato soup

Thursday:

  • D:  Turkey Burgers on a bed of greens

Friday:

  • D: Meatballs and sauce (I’m not sure what kind, we’ve got a lot of different types in the pantry right now), steamed veggies.

Saturday:

  • D: Henry’s Birthday Party is this day, so we’ll probably eating party leftovers.

Sunday:

  • D: The time honored LEFTOVER BUFFET!

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Recipe: Colonial Chowder

stemarie_1650sfortentrance.JPGMy mom found this recipe in a local paper years ago in a column called “Making it Light”. The basic gist of the weekly article was to take crazy fat and calorie laden recipes healthy.

The problem becomes that that a lot of the changes that are made are so super drastic that the food no longer resembles the original recipe.  Since both recipes are published within the article, my mom was able to combine parts of each recipe to make something tasty and healthier than the original. I don’t have a link or a photo of the article or the original recipe, since it’s been over 20 years.

Without Further Adieu…. Colonial Chowder

Ingredients:

  • 2 T. Butter
  • 4 slices of bacon, finely diced (or you can use 1/2 cup of pre-cooked bacon crumbles)
  • 1 lb. boneless, skinless chicken breasts, cut into bite size pieces
  • 1 large yellow onions, diced
  • 4 ribs of celery, diced
  • 3 large carrots, diced
  • 3 potatoes, peeled and cut into chunks
  • 1 tsp. of each of the following: basil, oregano, thyme, sage
  •  Bay leaves (I usually use 2-3)
  • 6 cups chicken broth
  • 1.5 cup frozen corn, or 1 can rinsed and drained salt free corn kernels
  • 1 can cream-style corn
  • 1 can evaporated milk
  • Salt and Pepper to taste
Directions:
  1. In a large stock pot, melt 1 T. butter, and cook bacon.
  2. Add chicken and cook chicken until no longer pink.
  3. Add onions, and cook until translucent (about 5 minutes)
  4. Add remaining carrots, celery, potatoes, and chicken broth. Cook over medium heat, until potatoes are soft.
  5. Add both types of corn, and milk. Cook over medium/low for about 20-30 minutes.
  6. Add Salt and pepper as needed. Serve with Cheddar biscuits.

This recipe serves 8-10, freezes well, and makes great leftovers!

This recipe is naturally gluten free. It cannot be made vegetarian/vegan.

  • D: Turkey Meatloaf, mashed potatoes/cauliflower, and fruit

Saturday:

  • D: Henry has been asking to go out for dinner, so maybe Souplantation (one of his favs).

Sunday:

  • D: Chef Salad/leftover buffet. I love chef salad because you can just put whatever you’ve got in the fridge in the salad.

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Why I Love… Denny’s

I’m serious. Stop laughing! I love Denny’s. Here is why: When you have a kid on the spectrum, a lot of stuff is about textures, sounds… the “feels”, if you will. And almost every Denny’s looks the same. The menu is the same, the food tastes the same.  So, no matter where we go, he can have something to eat he likes in a place that is familiar.

And honestly, as far as diner food goes, it’s pretty good. They have heathy choices, they have junk food, and I can get a plate of scrambled eggs and chocolate shake at 2am if I need it.

Other reasons that Denny’s is the bee’s knees:

  • They have coupons. Sign up for their rewards club here, and they’ll email you coupons frequently. They also publish coupons in the Sunday paper, and sometimes in the junk mail too- just keep your eyes peeled.
  • When you are a rewards member, you’ll get a free build your own Grand Slam on your Birthday. SWEEET! That is Henry’s favorite birthday freebie- He knows that I’ll share it with him.
  • They participate in Dosh. We get 5% back when we eat there, can I can combine that with the coupons mentioned above.
  • The four of us can have a meal there for less than $25.00 (before coupon and Dosh cash back). Frequently there are leftovers too. Can’t beat that.
  • The do have Kid’s Eat Free twice a week, but my kiddos are pretty big eaters, and I find it easier (and cheaper) to order them something from the “grown up menu”. Right now, they are obsessed with sharing the Everyday Value Slam. Henry eats the pancakes (with butter), and Bitty eats the eggs and sausage. breakfast for 2 kids for just $4…. uh, ok. And I don’t have to wash the dishes!
  • We frequent the same 3 or 4 locations and the waitresses know the kids. They are always so sweet.

This week, I am professing my love for Denny’s. What do you love this week?

Recipe: Brussels Sprouts with Caramelized Onions and Bacon!

IMG_7046.jpgBrussels Sprouts have a bad rap… Stinky, weird texture, gross. All of these things can be true if you boil them whole.

I’ve got a great recipe to share than turns our poor, stinky, vilified veggie into a tasty side dish! I made these for Thanksgiving and they were a HIT!

Brussels Sprouts with Caramelized Onions and Bacon

Serves 6-8

Ingredients:

  • 2 1/2 lbs yellow or white onions, thinly sliced
  • 4T. Butter
  •  1/4 c water or white wine
  • 2 lbs cleaned and chopped Brussels Sprouts
  • 1 lb bacon, cooked, drained, and chopped
  • Salt and Pepper as needed
  • 1/4 C shaved parmesan cheese (optional)

Directions:

IMG_7047.jpgCook the bacon- I bake mine at 350 degrees for 10-15 minutes. Then I drain it on paper towels. Once it has cooled, I take my super sharp knife and chop it up.

IMG_7045.jpgCaramelize the onions. Cook onions in butter on low for several hours, stirring occasionally. Scrape the yummy brown bits off the bottom of the pan, adding water or wine to help loosen the brown bits.

Once the onions turn a lovely brown (about 3-4 hours on low), add in the cooked chopped bacon and combine.

IMG_7051.jpgAdd in the chopped Brussels Sprouts and cook on medium for about 10-15 minutes. Season with Salt and pepper as needed. Pour into a serving dish and top with cheese.

We had this for Thanksgiving, but it also is great any time. If you end up with leftovers, it’s also great on a homemade pizza crust, topped with some extra mozzarella and parm baked at 450 for about 10-15 minutes.
