1/22/18 Meal Plan MOnday

dsc07997

We are in our first full week of Husband being away at rehearsals after work, so dinners will be stuff that re-heats well or makes good leftovers.

I’m just posting dinners for our meal plan. The kiddos lately have been having protein pancakes (I like Kodiak Cakes mix- it’s yummy and very versatile) with butter and Peanut butter. Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes. We mix it up, and have different flavors and mix in all kinds of stuff into our shakes, so as not to get bored. Here area few of our favorite recipes.

Lunches for Lil’ Man are usually Peanut butter and crackers, fruit, milk, a protein muffin (aka a kid cupcake), and applesauce cup. He takes his lunch every day! Hubs usually has a protein shake or I pack him leftovers or a frozen entree.

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

Monday:

  • D: Aunt Linda’s Mess (receipt will be posted later today)

Tuesday:

  • D: Grilled Cheese and Soup

Weds:

  • D: Bean Rice, Veggie, & Cheese bowls

Thursday:

  • D: Chicken Chili (crockpot)

Friday:

  • D:  Leftover Fiesta (I need to clean out the fridge)

Saturday:

  • D: Date Night (dinner out)

Sunday:

  • D:   Breakfast for dinner (probably pancakes)

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).  It’s cold and rainy here in San Diego right now, so we may end up having more soup and salads if I don’t feel like cooking or get busy doing other stuff.

Zuppa Tuscana Soup CopyCat Recipe

IMG_5194.JPGThis is one of my favorite recipes to make and freeze. It makes a great meal to take to someone who is sick, bereaved, or just had a baby.

I discovered the recipe while I was pregnant with Lil’ Man and craved soup. I’ve tweaked it a bit from the original that I discovered online to fit more of our families tastes and sensibilities (the original recipe called for a lot of butter, half and half, and pork Italian sausage).

It’s gluten free naturally, and can be easily made vegetarian. I’ll include substitutions under the recipe.

Creamy Tuscan Soup

(Zuppa Toscana Copy Cat from Olive Garden)

Ingredients:

  • 1 lb turkey Italian sausage, crumbled (not in the casing)
  • 1½ tsp crushed red peppers (that’s 1/2 packet of the pepper flakes that come with take out pizza)
  • 1 large diced white onion (about 1 cup)
  • 1/4 cup bacon crumbles (I like the ones from Costco)
  • 2 tsp chopped garlic
  • 4 large cartons of chicken broth (your favorite brand/variety)- it’s about 12-ish cups of liquid. You could also do boullion cubes and water if you prefer.
  • 1 can evaporated milk
  • 3 large potatoes sliced (skin left on)
  • 1/2 bunch Kale or spinach, roughly chopped

Directions:

  1. Cook sausage in a large stockpot, crumble it up as you cook it.
  2. Once sausage is cooked, add bacon, onions, and garlic, and cook until onions are soft and clear (about 10 minutes).
  3. Add the broth, and cook on medium until the soup boils.
  4. Lower stove to low add sliced potatoes and cook over low heat until potatoes are tender, about 30-45 minutes.
  5. Stir in the milk, red pepper, and the kale/spinach and cook on low for 10-15 minutes, until kale/spinach is tender.

Makes about 10-12 servings.

To make this dish vegetarian, use soy italian crumbles and vegetable stock.

To make this dish vegan, use the variation above, and also substitute the evaporated milk for your choice of non-dairy milk.

As you store this soup in the fridge, it will become spicier, so I recommend no more than 2 days in the fridge before freezing it.

Black Bean Veggie Soup

IMG_7410I made this soup tonight and it was sooo good. This would be great for meatless Monday (if you do that at your house), or save this recipe for Lent (if you give up meat for Lent). I served it Mexican Cesar Salad.

It’s tasty, quick, and easy. It took about 5 minutes to put together, and I let it simmer on low for 45 minutes.

Black Bean Veggie Soup
Ingredients:

  • 1 can Campbell’s Black Bean Cumin & Cilantro Condensed Soup
  • 11 oz (1 can) of water
  • 15 oz can of diced tomatoes
  • 15 oz can of black beans, drained and rinsed
  • 1 bag of Birds Eye Recipe Ready Southwest Blend
  • 1 packet Taco seasoning
IMG_7411
This Veggie blend is great! Perfect in soups, chili, and tacos!

Directions:

  1. Combine all ingredients in a stock pot
  2. Cook on medium/low for 45 minutes-1 hour.
  3. Top with shredded cheese. It’s also really good with hot sauce and a squeeze of lime.
  4. Serve with Mexican Cesar Salad (Recipe below) and warmed tortillas.

Makes about 6 servings.

The best part is that this meal was less than $1.00/serving! The can of Campbell’s Soup was .49, the tomatoes and black beans were .79/each, and the Frozen veggies were $1.00. I had taco seasoning in the cupboard (It was freebie from a few months ago).  All of these ingredients can be purchased at your local 99 Cents Only (That’s where I got them!).

Here what I serve this incredibly filling soup along side:

Mexican Cesar Salad

  • 6-8 cups of your favorite lettuce/lettuce blend (romaine and bibb is great!)
  • 2 tomatoes cubed/sliced
  • ½ cup purple onion, cut into rings
  • ¼ c ranch dressing
  • ½ c your favorite salsa
  1. Combine the salsa and ranch together, chill in fridge 6-8 hours before servings. This allows the flavors to blend.
  2. Toss the veggies in a chilled salad bowl with the dressing.
  3. Top with ¼ c crushed corn chips/tortilla chips for some added crunch!

Serve topped with grilled chicken breasts for an entree or without meat as a side dish.  Serves 3 as an entree, serves 6 as a side dish.

12/18/17 Meal Plan Monday

dsc07997

I am really tired of not feeling well. First everyone got the gross tummy bug that was going around, now I have the Santa Ana triggered Sinus pain/nose drip. UGH. This week is going to be lots of soup and crockpot stuff. It’s been cold here at night (well, cold for us, in the low fifties and high forties), so soup will be nice.

I’m just posting dinners for our meal plan. The kiddos usually have a small toasted bagel with cream cheese for breakfast along with fruit.  Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes with frozen bananas and PB2.

Monday:

  • D: Going out- The kids and I are meeting some friends at the Zoo! Even though I feel like crap, I promised them we’d go.

Tuesday:

  • D: Vegetarian black bean chili

Weds:

  • D: Grilled Cheese & Chicken Soup

Thursday:

  • D: Smoothies and soup

Friday:

Saturday:

  • D:  Bean, Rice, and Cheese burritos

Sunday:

  • D:  Leftovers!

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Pumpkin Baked Donuts!

Screen Shot 2017-10-08 at 7.09.21 PM.png

We love donuts. BUT, we don’t love that they are fried and dipped in sugary frosting (ok, some of us do… the kids).

After hearing hubs and Henry complain about neeeeeeding donuts, I rummaged through the cupboard and came up with:

Similar to my 3 ingredient chocolate cake, I set in motion to make some tasty donuts.

I grease my silicone baking dishes. I use a little butter.

All you do is mix the cake mix with the pumpkin and add spices to taste (usually 1t. cinnamon and a few dashes of ginger and nutmeg).

Pour into the donut “holes” (about 1/2 full) and bake per the mix directions for cupcakes.

Most cake mixes make 12 donuts. I let the donuts sit in the pan until they are cool, them take them out and do batch #2.

If you NEED glaze, mix:

  • 1 cup powdered sugar (confectioners sugar)
  • 1 T. soft butter
  • 1t. vanilla (you could use maple extract if you wanted to make it UBER FALL)
  • 1T. milk

Whisk all together and drizzle over the donuts.

This recipe is easy peezy pumpkin squeezy! It’s totally kid approved as well, which is why there are no after photos. It goes great with a PSL or other fall themed coffee beverage,

Meal Plan for the Week!

DSC07997

This week has been crazy, and it’s just Tuesday! Mr. is sick, so our usual routine has been thrown off.

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

We’re pretty stocked up of food for the next week or so- We’ll need milk, cream cheese, and cheese. I’ll probably hit up Costco tomorrow.

Monday:

  • D: Chicken Tortilla Soup and toast

Tuesday:

  • D: Soup and grilled cheese (While Mr. is sick, we may be eating a lot of soup)

Weds:

  • D: Breakfast for dinner

Thursday:

  • D:  Spaghetti Squash boats with Vegetable Marinara sauce

Friday:

  • D: Date Night! (we go out)

Saturday:

  • D:  BBQ hamburgers and BBQ veggies

Sunday:

  • D: Leftover buffet

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Frugal (and healthy recipe): Zucchini chips!

file000926780482.jpgWe’ve been blessed (?) with an abundance of yellow zucchini as of late. Friends with gardens and  a CSA box have brought us literally 10 lbs of yellow zucchini…. That’s a lot. So after making lasagna, stir fry, and zoodles, We were still left with 6 of those little yellow bastards, staring me in the face.

Screen Shot 2017-09-21 at 6.34.48 PM.pngI googled “What to do with Yellow Zucchini” and the answers were shockingly, NSFW. However, deep in the recesses of Google were many recipes for baked chips.  Figuring it had to be better than my kale chips debacle (5 lbs of burnt, greasy kale bits, no thanks), I set off to work.

The first batch was too greasy, so the batch that’s in the oven now has far less oil (only 2 tablespoons). Hubs said they were tasty (albeit greasy), and even Itty Bitty gobbled a bunch down today (after I blotted them with a paper towel).

Screen Shot 2017-09-21 at 6.34.54 PM
Now, to wait…..

Feel free to sub in any herb or spice blend you like, I grabbed the first one off the spice rack.

Baked Yellow Zucchini Chips

Ingredients

  • 2 lbs yellow (or green) zucchini
  • 2 T. olive oil
  • 2 T (or more), your favorite salt free herb or spice blend
  • salt, to taste

Directions

  1. Thinly slice coins of zucchini- you can use a mandoline like this one, or a knife- whatever you’ve got.
  2. Blot them dry between two paper towels. I let mine sit between two paper towels for about 30 minutes.
  3. Toss with oil, and spread 1 layer on a cookie sheet topped with a sil pad (or you can use parchment paper- whatever you’ve got).
  4. Sprinkle oiled slices with herbs or spices.
  5. Bake at 225 degrees for a minimum of 2 hours. Check after 2 hours. Depending on how thick your chips are cut, it may take up to 2 1/2 hours.
  6. After they are room temp, then sprinkle with salt to taste. Store in a sealed container on the counter. They stay good for 3-4 days, but they won’t last that long.

Monday:

  • D: Steak (it was a gift!), roasted broccoli, green salad, cheese toast. The kids don’t like steak, so they’ll probably have grilled cheese sandwiches on cheese toast (Lil’ Man discovered them not long ago and he told me it’s the “fancy” way to make grilled cheese).

Tuesday:

  • D:  Bean, Rice, and cheese bowls (they also have caramelized onions and peppers) This is a fav in our house. It’s healthy and inexpensive.

Weds:

  • D: Home made Red Sauce (made in the crockpot- Recipe will be posted tomorrow!) baked with cheese in Zucchini Boats. Thanks to my friend Lisa for the monster zucchini!

Thursday:

  • D:  Breakfast for dinner (probably frittata)

Friday:

  • D: Date Night! (we go out)

Saturday:

  • D:  Home made Pizza, and fruit salad

Sunday:

  • D: Leftover buffet

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

We’ve got a busy week with ABA Therapy three times, a Lego Movie event, a Lego event at our local Library, and a trip to Legoland on Saturday (just me and my Lil’ Man!).  I’ve made sure to fill up our snack backpack and wash out our water bottles.

Healthy, Frozen Fruit Pops!

file000380806960.jpg

It’s summer and my kids would eat popsicles 24/7 if I let them. Most commercial popsicles (or as they are sometimes called, frozen dessert confections) are full of sugar and artificial ick. A few months ago my dad bought me a package of Zipzicles on Amazon. Zipzicles are long, skinny zip top freezer bags that can be filled with whatever you’d like and frozen. Think DIY Otter Pops.

What I really like is that you can be creative, use what you have on hand, and create healthy and fun treats with your kids.

Here are two recipes that the kids and I came up with. If you follow me on Instagram, you may have seen this pictures recently.

Screen Shot 2017-06-23 at 7.46.47 AMMixed Berry Pops

Makes about 12 pops

  • 2 cups mixed berries (use whatever you have, I used 1.5 cups of strawberries and 1/2 cup blackberries)
  • 1/2 c water
  • 2 t. honey

Place all ingredients into the blender and blend until smooth. Use a small funnel to fill the zipzicle pouches. Place all Zipzicle pouches into a cup or larger zip top bag and place in freezer. Ready to serve in approx 4-6 hours, or as soon as frozen solid.

Screen Shot 2017-06-23 at 7.46.35 AMTropical Pops

Makes about 20

2c frozen bananas
2c frozen Strawberries
1 pkg frozen mangoes
2c Orange Juice
Blend together, pour into Zipzicle pouches ( I use a funnel). Store in freezer until it’s time to consume.

They are so good, and no extra sugar is needed, because the bananas are so sweet.

Next, I think we’ll be making Bachelor Mousse treats. I think it will freeze well, and everyone loves fudgsicles!

For your convenance, Zipzicles can be purchased here (affiliate link), but you can also find them at Bed, Bath, and Beyond.

What would you put into your Zipzicles?

Practical Ways to Help New Parents…

Having had two kids, I can tell you that nothing is more helpful than having food to eat in the first few weeks after giving birth. Having a baby is stressful, especially if it’s your first. You can take all the classes in the world, do as much prep, but when it comes down to it, you spend the first few weeks tired, stressed, and weary.

Having a few extra hands and a hot meal you can eat one handed (especially something you can eat while breastfeeding) is worth it’s weight in gold!

Recently a friend and his wife welcomed their little girl. Hubs made up a batch of his new baby calzones. He makes them for everyone of our friends that is having a baby. They freeze well, re-heat quickly (and well), and you can eat them one handed.

Thanks to Kasandrinos Olive Oil and UsFamily Guide for the opportunity to sample this olive oil for free! I’m not usually a big Olive Oil fan, Kasandrinos Olive oil has a light flavor that works really well in Calzones! I also like that it has an easy to pour spout inside the bottle!

We use the Pizza Crust Recipe from Mark Bittman’s How to Cook Anything. You can find the recipe here.  One Pizza Crust makes 4-6 small calzones.IMG_2064.jpg

As the dough rises, we prep the rest of the ingredients. Sauce, cheese, meats, veggies.

I use canned tomato sauce and add Italian seasoning, red pepper flakes, a pinch of parmesan cheese, salt, and black pepper. No added sugar.

Some of the most popular ingredients around here: pepperoni, sausage, onions, bell peppers, ground cooked beef, sliced chicken breast, goat cheese, mozzarella, bbq sauce (instead of tomato sauce), cheddar cheese, ham, green chilis, meatballs (I usually make them little or slice them up), pretty much anything in the fridge!

Once the dough is ready, it is portioned out, rolled and then the magic happens!

For small/hand held sized calzones, use 1/2 cup cheese/toppings and 2-3 T. of sauce. Fold over and crimp the edges shut, and place on a cookie sheet that is either sprayed with Pan or use a silicon baking mat. I have these and I love them!

Larger Calzones need almost double the amounts above.

Bake at 450 for 10-20 minutes, depending on size.

Before and after baking!

IMG_2068

Here is the result of a few hours work. They were delivered the next day, ready to be frozen and enjoyed at the new mom and dad’s leisure!

If cooking isn’t your “thing” here are a few other ways to help the new parents in your life:

  • Bring them their favorite coffee drink, and something to eat.
  • Offer to hold/watch the baby while they take a shower/take a nap/have 5 minutes alone.
  • Fold/put away their laundry.
  • Wash their dishes.
  • Take out the trash, or if trash day is the next day, take their cans down to the street (then the next day, stealthily put them back).
  • Be there. Honestly, it can be lonely if you are a new parent. It’s not like you are taking your new baby all over town. You are just trying to get the hang of having a new family member. Sometimes it’s just nice to have someone to come hang out with!

Kasandrinos and Us Family guide provided us with a free bottle of olive oil in exchange for this post. All opinions are my own. I was not financially compensated.
