New Recipe: Italian Pot Roast

I got a roast the other day because I really wanted something beefy and comforting, but I didn’t want to make Moosie’s Pot Roast, because while it’s so good, it’s a tad heavy.

I wanted to make something beefy, flavorful, and rich, but not heavy. I pulled out a few cookbooks, looked through the cupboard and the cooler where the veggies are chilling (pun intended), and came up with this. It’s like Oso Bucco, Bolognese sauce, and beef stew had a complicated tryst. All of the fresh vegetables came from our Yasukochi CSA Box.

 

 

 

 

Italian Pot Roast

Serves 4-6

Ingredients:

  • 1 Chuck Roast (2-3 lbs)
  • salt and pepper
  • 4 T. Olive Oil
  • 1 large sweet onion, halved and sliced
  • 1 Bell Pepper, sliced (I used Red, but use whatever you’ve got)
  • 2 Carrots, Peeled and diced
  • 3-5 cloves garlic, diced
  • 6-8 fresh tomatoes, chopped (You can substitute 2 15 oz cans of diced tomatoes if you don’t have fresh)
  • 1 can tomato paste
  • 1/2 cup white wine
  • 1 bay leaf
  • 2 T. Italian Seasoning

Directions:

  1. Salt and pepper the roast and set aside. I recommend allowing the roast to warm up to room temp before searing it.
  2. In a large pan, heat 2 T. olive oil, and saute onions, peppers for about 10-15 minutes, until soft and browned.
  3. Add in carrots and garlic, and allow them to cook for about 5 minutes. Garlic will be slightly browned and fragrant.
  4. While veggies are cooking, chop up tomatoes and add to slow cooker.
  5. Add tomato paste to slow cooker.
  6. Add cooked veggies, bay leaf, and Italian Seasoning to the slow cooker.
  7. Add remaining 2 T. olive oil to the previously used large pan, and allow to warm.
  8. Sear the roast on all sides.
  9. Add roast to slow cooker.
  10. Pour wine into the large pan and turn heat to medium-high. Scrape all browned meat and veggie bits with a wooden spoon. One wine comes to a brief boil and all browned bits are scraped off the pan, pour liquid into the slow cooker.
  11. Cook on low for 6-8 hours.
  12. Put roast beef from the slow cooker, and shred with forks. Return the meat to the slow cooker and stir. Cook for an additional hour.

Serve with mashed potatoes or pasta/noodles of your choice.

Frugal Recipe: Beef Machacas (Slowcooker recipe)

Look at the delicious marbling!

This is an easy recipe, and it is divine! You may already have most of the ingredients in your kitchen too!

It’s pretty flexible when it comes to the meat- You want a good roast with some marbling. Chuck Roast, Tri-tip, Round Roast, Rump Roast are all good options. This recipe cooks low and slow all day. Break out your slow cooker my friends!

  1. In a heavy-bottomed cast-iron skillet or dutch oven, heat canola oil, add beef, and sear each side for 5-8 minutes. You want a nice brown crust on each side. If the piece is large, cut it in pieces to fit into your slow cooker.
  2. As the meat is searing, in your slow cooker pour frozen vegetables.
  3. In a mixing bowl, mix tomato sauce, salsa, and spices.
  4. Place the meat in the slow cooker, and pour water into the pan that browned meat. Stir and scrape off any browned/burned bits off the bottom of the pan. Pour that water into the sauce bowl and mix thoroughly.
  5. Pour sauce over meat and cook on low in the slow cooker for 10+hours.
  6. Pull meat out, and shred with two forks. Return to the slow cooker, and keep simmering on low until the sides are ready to eat.

I serve this meat with beans, rice, tortillas, Corn and Avocado Salsa, and a green salad. It keeps well in the fridge for a few days, and you can freeze it as well. It’s also excellent in the morning with eggs in a breakfast burrito.

Recipe: Beef Stew

Thick, rich, and ready to get in my belly!

I love a good, hearty beef stew. It can take a little effort, but oh, man is it worth it.

I made this last week, and I started off by looking at How To Cook Everything by Mark Bittman, which is a great cookbook if you are looking for something beyond the basics of Betty Crocker or Better Homes and Gardens. Each recipe has tons of variations and substitution suggestions to make each dish your own.

This recipe is an amalgamation of Mr. Bittman’s recipe and several additions that give a rich, thick, hearty stew.

Ingredients

  • 2.5-3 pounds of beef stew meat, cut into bite-size pieces
  • 2 T. cooking oil (I used avocado)
  • 2T butter
  • 2 sweet onions, chopped
  • 4 cups beef stock
  • 3 potatoes, peeled and cut into bite-size pieces
  • 3-4 carrots, peeled and cut into coins
  • 1/2t. dried thyme
  • 2 cloves garlic, minced
  • Kosher salt
  • fresh cracked pepper
  • 1/2c red wine
  • 2T. Tomato Paste
  • 3T. All-purpose flour

Directions

  1.  In a large stockpot, heat oil, and cook the beef in batches to brown. If your pot is large, there may not be a need to cook in batches.
  2. After the beef is browned, add the onions, and cook until clear and tender.
  3. Sprinkle flour over the meat and onions, and stir to combine.
  4. Brown the flour gently, this may take a few minutes. Stir frequently to avoid burning. the flour will stick to the meat and onions- this is ok. While string, you may notice the flour forming a paste that browns- this is what you want.
  5. Add garlic and cook until fragrant.
  6. Add beef stock and thyme, and stir to combine and continue to stir as the mixture thickens.
  7. As the stock thickens, add wine, tomato paste. Allow the stew to cook on low for 20-30 minutes.
  8. Add potatoes and carrots and cook soup on low for 20-30 minutes with the lid on the stockpot.
  9. Taste and add salt and pepper as needed.
  10. Continue to simmer as desired, if you want thinner stew, add more stock. If you like a thicker stew, remove the lid and allow the stew to simmer for 10-20 minutes until the stew reaches your desired thickness.

Some notes: I add wine and tomato paste because the acid in both helps break down the collagen in the meat, making it more tender, and giving the stew broth a more luscious mouthfeel. You can do without one or the other if you prefer.

I don’t like peas, so I omit them from my stew. If you like them, add 1/2-1 cup frozen peas about 10 minutes before serving. This keeps them from getting mushy or falling apart.

If you like more of a French-style beef stew, add 1/2-1 cup chopped mushrooms when you add the other veggies.

This recipe makes about 8-10 servings of stew. I like to serve the stew with crusty french bread, or sourdough toast, and of course SALAD. I like a peppery arugula (or rocket) salad with beets, goat cheese, and a simple vinaigrette. That combination really pairs well with the richness of the stew.

And of course, this stew freezes well and tastes better the next day.

Hearty French Beef Stew Recipe!

Who needs a filter when you’ve got steam?

Earlier in the week I made beef stew. It was so good that I had a hard time waiting the full 10 hours until dinner  to dish myself up a bowl! I cooked it on the stove, but it can definitely  be cooked in a crockpot after the initial browning of the meat.

I based my recipe on my mom’s boeuf bourguignon recipe, but I omitted the bacon, as we didn’t have any in the house.

Ingredients:

  • 1.5 cups white onions, diced
  • 3/4 cup each carrots and celery, diced
  • 1 cup white mushrooms, cleaned and sliced (tops only, stems may be discarded or saved for a later use)
  • 2 T. Air Dried Shallots
  • 1 T. Minced Garlic
  • 4 T. Butter or Olive Oil (your choice), divided
  • 2 lbs. Stew Beef, cut into bite sized pieces (chuck roast works great)
  • 1/2 c. AP Flour
  • 6 cups beef stock
  • 1 Bottle Red Wine (approx. 4 cups), your choice.
  • Spices: 1 Bay leaf, 1 T. French Tarragon, Pinch Rubbed Sage, 1 T. Thyme, Salt, Pepper

Directions:

  1. In a Large Stock pot, melt 2 T. butter/heat olive oil over medium heat.
  2. Add onions, carrots, celery and mushrooms. Cook on medium/low heat, stirring occasionally until onions are clear and veggies have sweated.
  3. While veggies are cooking, rinse meat and toss gently in AP Flour to coat.
  4. After veggies are cooked, scoop out of pot and set aside, add remaining butter/oil, and brown beef over medium heat.
  5. Add cooked veggies back in and stir/scrape browned bits off the bottom and sides of pot.
  6. Turn heat up to medium/high and add in about half the wine. Scrape off as much of the browned bits off the bottom and sides as you can as the wine cooks.
  7. Add remaining wine, stock, and herbs. Cover pot and cook on low for 6-8 hours, stirring occasionally. If you wish, you can transfer everything to a crockpot and cook on low for 8-10 hours.
  8. Serve with hot, buttered bread, and a green salad. It is soooooo good. If you have leftovers (hahahaha), it is great re-heated and served over rice or buttered noodles.

 

Family Recipe: Aunt Linda’s Mess

file8721293943264.jpgAunt Linda’s Mess, this recipe has been in my family for at least 50 years. When I was a kid we ate it at least once a month. My mother was born on her Aunt Linda’s birthday.  Aunt Linda and her husband live in Minnesota, where the majority of my mother’s family still lives today.  This dinner is what is referred to in the midwest as a “hotdish” and is frequently prepared in an electric skillet. This recipe serves 6-8 with a side dish, like a green salad, or steamed veggies.

This cheesy delicious mess is a great meal for kids and grown ups alike.  I’ve modified it a bit from it’s original form (which calls for Velveeta and canned mushrooms).

I’m not sure if Aunt Linda invented this dish or if she inspired this dish- and no one knows why it’s called a mess.  It reminds me of a cheesy stroganoff. Regardless- No one can say no to this dish!

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1C chopped mushrooms (fresh are better, but you can used canned mushrooms if you prefer- just remember to drain them!)
  • 1 can cream of mushroom soup (you can use low fat/low sodium if you prefer)
  • 1/2C+ shredded cheddar cheese
  • 1 carton sour cream (or plain Fat free Greek yogurt)
  • 1 package cooked spaghetti (you can use any kind of pasta or macaroni- you want 6-8 cups of cooked pasta)

Directions:

  1. Brown and crumble beef.
  2. Add onion and mushrooms. Sauté until onions are transparent and mushrooms have softened (about 10 minutes).
  3. Add canned soup and cheese.
  4. Cook until the cheese is melted.
  5. Remove from heat and stir in the sour cream.
  6. Add the cooked, drained pasta and toss to coat the pasta.

You can omit mushrooms if you don’t care for them. Unfortunately, I’m not sure if there are any vegetarian or vegan work arounds for this recipe, since it’s mostly meat and dairy products!
