End of the Year Freebie Round-up!

10 days left of this year, and I don’t now about you, but I’m renewing my Annual New Year’s Goal to remain as frugal as I can.

Part of how I do that is to pick up free samples of products whenever I can- Most of the time those samples come with some pretty high value coupons! So I get to try out new products and score coupons!

Black Bean Veggie Soup

IMG_7410I made this soup tonight and it was sooo good. This would be great for meatless Monday (if you do that at your house), or save this recipe for Lent (if you give up meat for Lent). I served it Mexican Cesar Salad.

It’s tasty, quick, and easy. It took about 5 minutes to put together, and I let it simmer on low for 45 minutes.

Black Bean Veggie Soup
Ingredients:

  • 1 can Campbell’s Black Bean Cumin & Cilantro Condensed Soup
  • 11 oz (1 can) of water
  • 15 oz can of diced tomatoes
  • 15 oz can of black beans, drained and rinsed
  • 1 bag of Birds Eye Recipe Ready Southwest Blend
  • 1 packet Taco seasoning

This Veggie blend is great! Perfect in soups, chili, and tacos!

Directions:

 

  1. Combine all ingredients in a stock pot
  2. Cook on medium/low for 45 minutes-1 hour.
  3. Top with shredded cheese. It’s also really good with hot sauce and a squeeze of lime.
  4. Serve with Mexican Cesar Salad (Recipe below) and warmed tortillas.

Makes about 6 servings.

The best part is that this meal was less than $1.00/serving! The can of Campbell’s Soup was .49, the tomatoes and black beans were .79/each, and the Frozen veggies were $1.00. I had taco seasoning in the cupboard (It was freebie from a few months ago).  All of these ingredients can be purchased at your local 99 Cents Only (That’s where I got them!).

Here what I serve this incredibly filling soup along side:

Mexican Cesar Salad

  • 6-8 cups of your favorite lettuce/lettuce blend (romaine and bibb is great!)
  • 2 tomatoes cubed/sliced
  • ½ cup purple onion, cut into rings
  • ¼ c ranch dressing
  • ½ c your favorite salsa
  1. Combine the salsa and ranch together, chill in fridge 6-8 hours before servings. This allows the flavors to blend.
  2. Toss the veggies in a chilled salad bowl with the dressing.
  3. Top with ¼ c crushed corn chips/tortilla chips for some added crunch!

Serve topped with grilled chicken breasts for an entree or without meat as a side dish.  Serves 3 as an entree, serves 6 as a side dish.

Holiday and Game Day Fun with Hormel Gatherings Party Trays!

I received free product in exchange for my honest review. I love this time of year- We go to and host so many events: Holiday Parties, Craft Play Dates, College Football and NFL Watching Parties, and of course Coupon Meet Ups!

I chose the Honey Ham and Turkey Party Tray for our recent dinner party. We got together to play games and hang out.

The tray is super sturdy, which is definitely a plus. Each component is packed up in the tray. All you do is open each sealed bag, and arrange the tray in a manner that suits you. Because of the tray and great snap-on lid, I think this would be a great addition to any tail gating event or potluck! Super easy to transport and store any leftovers- But who am I kidding… There won’t be any leftovers.

If you are feeling fancy, you can set out condiments that would go with the meats and cheeses. I mixed up some honey mustard and opened a jar of spicy stone ground mustard.

IMG_7116.jpgHere is the plate that Henry made for one of our guests. For a 6 year old, I’m impressed- He also took the picture with my phone. I love having the kids help with holiday events. It helps them get into the spirit too, and reminds me that these kind of events should be low stress.

Bitty Bird “helped” by stacking up paper napkins and announcing when guests arrived (“Mommy and Daddy, Peoples is in our HOOUSSSEEEE!!”), and Henry helped me by picking up the toys in the living room, taking coats, and getting drinks. He pretended he was a waiter. It was pretty funny. He refused to let me take his picture, but at one point he had a kitchen towel draped over his arm. He has asked that we serve PB Sushi at our next “fancy grown up party”.

11/27/17 Meal Plan Monday!

Thank goodness Thanksgiving break is over! Henry is back at school, but, Bitty Bird is sick. We’re both a little cranky today,

I’m just posting dinners for our meal plan. The kiddos usually have a small toasted bagel with cream cheese for breakfast along with fruit.  Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes with frozen bananas and PB2.

Lunches for Lil’ Man are usually Peanut butter and crackers, fruit, milk, a protein muffin (aka a kid cupcake), and applesauce cup. He takes his lunch every day! Hubs usually has a protein shake or I pack him leftovers or a frozen entree.

Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

Monday:

  • D:Soup and grilled cheese sandwiches

Tuesday:

  • D:  Salsa Chicken with brown rice, salad

Weds:

  • D: Spaghetti with homemade marinara, steamed brocolli

Thursday:

  • D:   cheese and veggie enchiladas (1 dish meal)

Friday:

  • D: Date night!

Saturday:

  • D:  Leftover fiesta (I think we’ll have lots of leftovers this week)

Sunday:

  • D:  breakfast for dinner

The menu may change, as  I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first).

Pumpkin Baked Donuts!

We love donuts. BUT, we don’t love that they are fried and dipped in sugary frosting (ok, some of us do… the kids).

After hearing hubs and Henry complain about neeeeeeding donuts, I rummaged through the cupboard and came up with:

Similar to my 3 ingredient chocolate cake, I set in motion to make some tasty donuts.

I grease my silicone baking dishes. I use a little butter.

All you do is mix the cake mix with the pumpkin and add spices to taste (usually 1t. cinnamon and a few dashes of ginger and nutmeg).

Pour into the donut “holes” (about 1/2 full) and bake per the mix directions for cupcakes.

Most cake mixes make 12 donuts. I let the donuts sit in the pan until they are cool, them take them out and do batch #2.

If you NEED glaze, mix:

  • 1 cup powdered sugar (confectioners sugar)
  • 1 T. soft butter
  • 1t. vanilla (you could use maple extract if you wanted to make it UBER FALL)
  • 1T. milk

Whisk all together and drizzle over the donuts.

This recipe is easy peezy pumpkin squeezy! It’s totally kid approved as well, which is why there are no after photos.It goes great with a PSL or other fall themed coffee beverage,

 

Meal Plan for the Week!

This week has been crazy, and it’s just Tuesday! Mr. is sick, so our usual routine has been thrown off.

Weds:

  • D: Breakfast for dinner

  • D:  Spaghetti Squash boats with Vegetable Marinara sauce

  • D: Date Night! (we go out)

Saturday:

  • D:  BBQ hamburgers and BBQ veggies

Sunday:

  • D: Leftover buffet

Frugal (and healthy recipe): Zucchini chips!

file000926780482.jpgWe’ve been blessed (?) with an abundance of yellow zucchini as of late. Friends with gardens and  a CSA box have brought us literally 10 lbs of yellow zucchini…. That’s a lot. So after making lasagna, stir fry, and zoodles, We were still left with 6 of those little yellow bastards, staring me in the face.

However, deep in the recesses of Google were many recipes for baked chips.  Figuring it had to be better than my kale chips debacle (5 lbs of burnt, greasy kale bits, no thanks), I set off to work.

The first batch was too greasy, so the batch that’s in the oven now has far less oil (only 2 tablespoons). Hubs said they were tasty (albeit greasy), and even Itty Bitty gobbled a bunch down today (after I blotted them with a paper towel).

Feel free to sub in any herb or spice blend you like, I grabbed the first one off the spice rack.

Baked Yellow Zucchini Chips

Ingredients

  • 2 lbs yellow (or green) zucchini
  • 2 T. olive oil
  • 2 T (or more), your favorite salt free herb or spice blend
  • salt, to taste

Directions

  1. Thinly slice coins of zucchini- you can use a mandoline like this one, or a knife- whatever you’ve got.
  2. Blot them dry between two paper towels. I let mine sit between two paper towels for about 30 minutes.
  3. Toss with oil, and spread 1 layer on a cookie sheet topped with a sil pad (or you can use parchment paper- whatever you’ve got).
  4. Sprinkle oiled slices with herbs or spices.
  5. Bake at 225 degrees for a minimum of 2 hours. Check after 2 hours. Depending on how thick your chips are cut, it may take up to 2 1/2 hours.
  6. After they are room temp, then sprinkle with salt to taste. Store in a sealed container on the counter. They stay good for 3-4 days, but they won’t last that long.
