Stockpile Cooking: Yummy Strudel Pumpkin Muffins

Screen Shot 2019-09-15 at 7.35.48 PM.pngAs part of my “use it up, wear it out, make it do or do without” mantra, I’m trying to bake more out of the cupboard. It helps us use up what we’ve got on-hand, and it’s also a lot healthier than buying store-bought muffins.

While I was digging in the very back of the cupboard, I found

These muffins were amazing. The recipes makes 1 mini muffin pan (24 mini muffins), or regular sized muffins.

 

Low Fat Pumpkin Muffins

  • 1.5 cups all-purpose flour (you can also use whole wheat flour, or a 1 for 1 gluten-free flour blend if you prefer)
  • 1/4 cup flax meal (You could also use almond meal if you prefer)
  • 1 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 Tablespoon ground cinnamon
  • 1 Tablespoon ground ginger
  • 1 can canned pumpkin puree (approx. 30-ish ounces)
  • 3/4 cups light brown sugar
  • 3 oz. container of fat-free Greek vanilla yogurt (or use 3oz. of fat-free plain Greek yogurt and 1 T. vanilla extract)
  • 1 egg
  • 1/3 cup milk (whatever kind you like)

  • 1/4 cup (1/2 stick) room temperature butter
  • 1/4 cup light brown sugar
  • 1/4 c. oatmeal
  • 1/4 cup Flour (you can also use whole wheat flour, or a 1 for 1 gluten-free flour blend if you prefer)
  • 1 teaspoon ground nutmeg
  • 1 Tablespoon ground cinnamon
  • 1 Tablespoon ground ginger

Directions:

Muffins-

  1. Mix dry ingredients together, set aside.
  2. In a large bowl, combine all the wet ingredients with an electric mixer until smooth and combined.
  3. Add dry ingredient mixture to the wet ingredient mixture and mix until smooth and combined.
  4. Pour batter into greased muffin tins (or use cupcake liners).

Strudel-

  1. Mix all strudel ingredients together in a small bowl.
  2. Option one: Spoon about a tablespoon of the strudel onto the uncooked muffins right before putting to the oven.
  3. Option two: Fill the muffin tins halfway with muffin batter, drop in the strudel mix, and top with more muffin batter to make strudel surprise muffins.
  4. Bake at 350 degrees for 18-20 minutes.

Summer Veggie & Goat Cheese Tart

PICT0097.JPGI was talking about this really amazing dish with my mom the other day, and I realized that I had not posted the recipe!

I can’t find the original recipe for this, but I was driving around the week before Independence Day, and I was listening to NPR when this recipe was discussed.

I made this tart for our 4th of July celebration, and it was gone almost instantly! I didn’t even get a photo of it after it came out of the oven.

This recipe is great with veggies fresh from the garden!

 

Oh man was it good! It’s easy to make, and you can substitute any veggies that you have in your kitchen (or garden).

Easy Summer Veggie & Goat Cheese Tart

Ingredients:

  • 1 pie crust (make it from scratch or use a mix like this one)
  • 1 4-oz. package of goat cheese, your choice of variety (I used garlic and herb) at room temperature
  • 2 medium-size RIPE tomatoes, sliced
  • 1 small zucchini, cut into thin coins
  • salt and pepper to taste

Directions:

  1. Spray a baking sheet with non-stick spray, and pre-heat over to 400 degrees.
  2. Roll out pie crust, and smooth out into a circle.
  3. Spread goat cheese in an even layer in the middle of the pie crust. Leave about 2 inches around the edges.
  4. Layer veggies over goat cheese.
  5. Fold up sides of pie crust to cover veggies- leave about a 2-inch opening in the top (see photo below).
  6. Bake for 20-30 minutes at 400 degrees or until pie crust is toasty brown.
  7. Cut into 6-8 wedges and serve. It’s yummy hot or at room temperature, but it won’t be around long enough to get cold!

Family Recipe: Easy Chicken Parm Meatloaf!

046I found a cache of yummy, frugal family recipes, so I’ll be posting them over the next few weeks.

Most of these were formulated by my relatives to feed a hungry, hard-working family with kids. Everyone in my family is frugal, so these recipes won’t contain any expensive or strange ingredients in small quantities- There is nothing worse than trying a new recipe only to find you only need 2 Tablespoons of an ingredient that you’ve never used before, or worse yet, only comes in a HUGE container/package.

I will try to include the sides that we’ve traditionally served with the main dish to round out the meal.

Chicken Parm Meatloaf (serves 6)

Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup bread crumbs (I use Italian seasoned)
  • 1 tablespoons Italian seasoning
  • 1/2 c. Parmesan cheese
  • 1/4 c. shredded mozzarella cheese
  • 3 Tablespoons onions, finely chopped
  • 1/4 cup fresh white mushrooms, stems removed, cleaned and chopped into bite-size pieces
  • 1 t. Salt and pepper (each)
  • 1/2 c. Your favorite red pasta sauce

Directions

  1. Preheat oven to 350 degrees
  2. Grease a loaf pan
  3. In a large mixing bowl, combine all ingredients, except for pasta sauce.  Mix well until all ingredients are well combined and mixture resembles a meaty paste (about 3-5 minutes of mixing)
  4. Pour into a greased loaf pan, shape into a tidy loaf.
  5. Pour pasta sauce over the top of the loaf.
  6. Bake at 350 degrees for 25-30 minutes, until meat is cooked through. If you are using a meat thermometer, it should read 165 Degrees. I use this one.

I serve this dish with a green salad and Riced Caulifower with Italian Cheese.

 

Oat Flour Banana Bread Recipe

The big kid LOVES banana bread, so I am always looking out for new recipes, especially those that are higher in protein or lower in added sugar.

Recently we found ourselves with an overabundance of oatmeal, so I looked online for recipes to use it up and I discovered Oat Flour. You basically grind up oatmeal in your blender or food processor. Because it doesn’t contain any natural gluten, you have to use another flour with it otherwise your bread just… falls apart. It also doesn’t rise, so you will need to add leavening (baking soda in this recipe).

I also had received 30 bananas the next day, so I knew the time had come… TO MAKE BANANA BREAD!!

After looking through several recipes, I cobbled together a recipe that incorporated what I had on hand, and had all of the appropriate chemicals via ingredients to form quick bread. If you are interested in learning about baking and cooking ratios to form new recipes, check out Ratio by Michael Ruhlman– It’s great!

Banana Bread

Ingredients:

  • 1 c. Oat Flour
  • 1 3/4 c. AP Flour
  • 2 t. baking soda
  • 1 t. salt
  • 1/2 c. melted butter or melted coconut oil
  • 1/2 c. brown sugar, not packed
  • 2 ripe banans, mashed up
  • 2 eggs
  • 5 ounces plain Greek yogurt
  • 1 T. Vanilla
  • 1/2c chopped nuts (I like pecans, but walnuts work too) OPTIONAL

Directions:

  1. Grease a loaf pan and set aside Preheat oven to 350 degrees.
  2. In a small bowl mix flours, soda, and salt. Set aside.
  3. In a large mixing bowl, combine butter and sugar until well mixed.
  4. Add bananas and continue to mix until incorporated.
  5. Add eggs one at a time. Once they are blended, add yogurt and vanilla.
  6. Combine dry ingredients into wet, and add nuts (if desired). This batter is very wet!!
  7. Pour into greased pan and bake for 45-55 minutes.
  8. Once the bread is cooled, remove from loaf pan and serve with butter or cream cheese.

Options:

  • To make the recipe Gluten-free, use gluten-free oats, and a 1 for 1 Gluten-free flour.
  • To make the recipe vegan, use coconut oil in place of butter, substitute a flax egg, and use dairy-free Greek-style yogurt.

Home Maintenance: Cleaning your Vacuum

IMG_6712.jpgI know, I know. It’s hilarious to think that you should clean an appliance that is designed to clean, but really, if you think about it, if a vacuum cleaner is clogged with dirt and hair it can’t do its job.

And that sucks (see what I did there?).

After reading the manual that came with our vacuum, I set to work.

First, I took the canister off, dumped it in the trash, removed the filter, and washed them both. I used the blue Dawn dishwashing liquid. For the canister, I used a brush like this.

Then I removed the brush housing assembly, removed the soleplate, and clipped the hair and thread off the beater bar (that’s the thing that goes round and round and has little brushes on it). Once the beater bar was clean, I washed the soleplate and brush housing assembly.

I used a smaller brush like this, and also a straw cleaning brush to get into the tiny nooks and crankies. I think for next time I’ll be ordering a set like this:

It’s got all the size brushes you’ll need to clean out vacuum cleaner’s various parts. 

After everything was clean (it took about an hour, that included interruptions from the kids who needed snacks, cartoons, etc. And of course, the cat was starving and needed food RIGHT.NOW), I set them out on the patio bench on an old worn out towel that I use for cleaning. IMG_6706.jpg

The next day everything was bone dry and I re-assembled the vacuum cleaner and took it for a test drive. It was like using a brand new vacuum!

I clean my vacuum about once every six months. It helps keep it in good running order, which means it will last longer. Our previous Dyson lasted us 11 years, and I’d love for this one to last at least 11 years!

If you want to try it, I recommend that you check the owners manual for tips and instructions!
