Family Favorite Recipe: Mountain Man Breakfast Casserole

This is a great old Boy Scout/backpacking recipe. We eat it when we go camping, cooked in a dutch oven. You can cook it at home in a baking dish in the oven if you aren’t out cooking in a field.

  • 1 bag O’Brien Potatoes, approx 28 ounces- defrosted
  • 1 dozen eggs
  • 1/4 cup whole milk
  • 1 lb. bulk breakfast sausage (like Jimmy Dean) cooked, crumbled and patted to absorb the excess oil
  • 2 cups cheddar cheese, divided
  • Salt and pepper, to taste
  • Sour Cream and Salsa (for a topping)

Directions

  1. Mix the sausage,  1 cup of  the cheese, and potatoes in a bowl
  2. Pour sausage/egg/cheese mixture into a 9×11 baking dish
  3. Scramble eggs and milk and pour over sausage/egg/cheese mixture
  4. Top the dish with the remaining 1 c. cheese.
  5. Bake at 350 for 20-35 minutes until the eggs have set and the dish is brown, bubbly and delicious.
  6. Serve with Sour Cream and Salsa.
  7. Serves 8-10 at home 4-6 when camping (fresh air makes you hungry).

If you have any leftovers, it’s great in a warmed tortilla the next morning as a burrito! I’ve also been informed that this is really good with avocado slices on top.

 

Modifications for special dietary concerns:

  • You can make this vegetarian by using soy sausage crumbles.
  • This recipe is naturally gluten-free.
  • This recipe cannot be made vegan.

8/19/19 Weekly Meal Plan

Our out of town guests left this morning, so we are back to meal planning! And school starts on Wednesday for the big kid, so I’ll be doing shopping for school lunches this week with part of the grocery budget.

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

I’ve gotten a pretty good inventory of the pantry, freezer, and fridge done, so I’m able to plan meals and use up what we’ve got with little waste. If you are looking for kitchen inventory printable, I like the kitchen inventories here. They are great printables.

You may notice a lot of plant-based meals- We are not vegetarian, but I am trying to get more veggies into our diet. I do a lot of cooking from scratch- I find it easier to get veggies and fruit into recipes that I can have 100% control over.

I only post our dinner plans for the week, because our other meals are usually the same each day:

Breakfast: Coffee with heavy cream for me, and pancakes or something along those lines for the kids (they love the Kodiak Cakes Mix).  I also keep sandwich Ziploc bags of other frozen fruit on hand to make the kids smoothies when they request them (a few times per week). Berries, peaches, and mangos are pretty popular.

Lunches are leftovers, salads, or soups for me. The kids will be enjoying free lunches all over the county with free activities and playtime before or after lunch.

For dinner, when we’ve got busy days (like Mondays), I’ll try and put something in the crockpot (I am picking up my new crockpot this week) in the morning, or pull something I’ve already prepped out that can be quickly cooked.

  • Monday: Chicken Noodle Soup- I found a container of it in the freezer last night and defrosted it! We’ve got leftover fruit salad in the fridge too. I may also make grilled cheese sandwiches too.
  • Tuesday:  Spaghetti with leftover Veggie Loaded Meat Sauce (also found in the freezer), garlic bread, salad
  • Wednesday:  Veggie Korma – I found a Korma Kit at Grocery Outlet not long ago, so I’m making a big batch (there will be enough for at least 1 more meal)
  • Thursday: Breakfast for dinner-Poached Eggs, bacon, fruit salad
  • Friday:  Date Night
  • Saturday: Homemade Pizza Night
  • Sunday: Leftover night

The past week has been crazy! Running around, having adventures, trying to beat the heat. This week I’m trying to finish up a couple pieces, get some new content researched, and get the house ready for out of town guests who arrive early next week.   • Thursday: Something cool- it’s supposed to be really hot Thursday. I’m thinking about sandwiches and fruit salad.
  • Friday:  Date Night! I’ve got a Gift card to Smash Burger to use!
  • Saturday: Homemade Pizza Night
  • Sunday: Crockpot Enchilada- It’s a new recipe. If it turns out well I’ll share it.

  • Thursday:  Black Bean Soup and Quesadillas
  • Friday:  Date Night- I’m going to the PMJ Concert with a friend- We’ll stop for tacos after the show.
  • Saturday: Homemade Pizza Night (I have leftover dough in the freezer from last week)
  • Sunday: Bolognese Sauce with Zoodles. I planned on making the sauce last week, but never got around to it.

I also plan on doing some batch cooking this week to get some crockpot meals in the freezer.

This week I’m super busy- appointments, deadlines, and events for the kids. So I’m planning meals that are quick and easy. Also, it’s going to get increasingly hot this week, so easy to do meals that don’t involve using the oven.  Today I’m baking bacon (my secret to crispy splatter-free bacon) for meals throughout the week, and cinnamon rolls for dinner tonight and breakfast tomorrow.

Big Kid started Summer school this morning, so he’s enjoying a few hours of learning and play away from his little sister (which I’m sure they will both enjoy- They’ve been at each other for the past few days).   • Monday: Veggie curry & rice I’m making this for the first time. I’ll be posting the recipe later in the week!
  • Tuesday: Shakshuka– It’s a one dish meal (and it’s vegetarian!)
  • Wednesday:  Grilled Cheese and soup (I’ve got some leftover chicken noodle soup in the freezer)
  • Thursday: Breakfast for Dinner (pancakes and fruit salad)
  • Friday: I’m going to see my cousin play at a local tavern, so I might have a bite there, otherwise it might be leftovers.
  • Saturday: Homemade pizza night!
  • Sunday: Leftover Night

I’m home from Influential Summit, and boy, did they load us up with snacks and goodies! Our snack cupboard is full, and I’ll be putting together a big box of goodies together and post a giveaway later this week!

We have plenty of protein shake fixins’- I buy the over ripe bananas, peel and slice them pop them into ziploc bags, and freeze them for smoothies and protein shakes. I also keep sandwich ziploc bags of  other frozen fruit on hand to make the kids smoothies when they request them (a few times per week). Berries, peaches, and mangos are pretty popular.

Lunches are leftovers, salads, or a protein shake for me and the Mister, and The Big Kid has a specially packed lunch of whatever he’s into at the time (which changes frequently). Bitty Bird eats whatever I’ll feed her.

This week is going to be a little different tan usual. With Mr. on the cleanse, we’ll be eating a lot of whole foods/vegetables raw, and an old family friend steel cut oats will be coming to breakfast.

  • Monday: Leftover night! We’ve got leftover cheese enchiladas, pizza, and some homemade applesauce
  • Tuesday: Homemade chicken soup – I’ll post the recipe tomorrow!
  • Wednesday: Cheese and Veggie Quiche! I’ve got so many eggs!
  • Thursday: Grilled Cheese sandwiches, Green Salad
  • Friday:  Date Night (dinner out, but I’m not sure where)
  • Saturday: Chicken & Veggie Stir Fry with Cauliflower Rice
  • Sunday: tri-tip, baked potatoes, roasted veggies
