I decided last week that I needed to get back to my Artsy roots.
Each day for an hour I will work on some kind of art. Textile, painting, drawing, cooking, whatever. I will try to post pictures of whatever I work on each day on Instagram and Facebook.
Before we had kids, every day when I came home from work I did art in some form or another for about an hour. It was a wonderful way to be creative and keep my mind sharp. And I feel like I need to get back to that.
So far, I’ve worked on some sewing projects, embroidered, cooked, and colored. I’ve started a Pinterest Board too to keep track of my ideas and projects.

While I was at Influential Summit over the weekend, I met with the nice folks at Mabel’s Labels. They gave each attendee a packet of their new Glitter Labels. LOVE IT! Fingers crossed, this will keep everyone’s mitts off my water bottle!
Henry has had Mabel’s Labels for his stuff for a few years. I really like them. I’m not a big fan of putting kids name on personal stuff where strangers can see it (I grew up in the days of after-school specials and heightened awareness of strangers), but I do recognize the need for labeling the stuff kids take to school. I use Mabel’s Labels inside Henry’s backpack, and right under the loop on the outside. That way it is identifiable , but when he has it on, no one can see the labeling. I also use them on his lunch box, pencil case, and inside his shoes. Mabel’s does make special shoe labels too!
We opt for labels in his clothes too when we are out in crowded public places (like Disneyland, the zoo, county fair). Even though Henry is 6, he is autistic and has problems remembering my phone number, and he can get distracted in crowds, or fixated on one thing and want to go back to it and wander off.
Yeah I am!

If you follow me on Instagram, I just posted a picture with the two makeup looks I am contemplating for tomorrow. Tomorrow a bunch of bloggers, social media influencers, and brands are getting together in Carlsbad, CA (home of Legoland) to meet, learn, and chill at Influential Summit.
I’m looking forward to a day of learning and ADULT CONVERSATION!! For those of you who don’t work from home, being a work at home or stay at home parent can be very quiet. Well, you’re frequently not quiet (“Put down the cat”, “No, we aren’t watching Octonauts for 6 hours today!”, “Do you have to go potty?”, etc.), but what’s lacking is adult conversation.

Chicken Divan is also known as chicken and broccoli casserole, but we just call it yummy at our house. You can bake it in the oven, make it on the stove top, or cook it in the crockpot. I’ll give you all three cooking directions.
My family loves it!
The original recipe calls for rice or noodles, but I use Quinoa.
Chicken Divan
Ingredients:
2 large boneless, skinless chicken breasts, cut into bite sized pieces
1 small onion, chopped
1 tsp butter
4 cups of broccoli (Fresh or frozen, your choice)
2 cups white sauce, or 1 can Progresso Recipe starters (I prefer the roasted garlic, but the mushroom is good too)
3 cups cheese, divided (I like cheddar, but gruyere or swiss is good too)
1 cup quinoa, rinsed or toasted (You can substitute in 1 cup uncooked white rice instead)
2 cups chicken broth or water
1 tsp. garlic powder
salt and pepper to taste
Directions:
Crockpot
Saute onions in butter on the stove until softened and clear. About 5 minutes.
Place all ingredients except 1/2 c cheese, all water, and quinoa in crockpot and cook on low for 6-8 hours. add quinoa and water/broth, turn on crockpot to high for 1-2 hours, or until quinoa is cooked. Top with cheese and serve.
Stovetop:
Saute onions in butter on the stove until softened and clear. About 5 minutes.
Add chicken and continue to cook until chicken is no longer pink.
Add remaining ingredients except 1/2 c cheese, and cook covered on medium/low for 15-25 minutes or until most of the liquid has been absorbed by the quinoa. Top with cheese and serve.
Oven:
Saute onions in butter on the stove until softened and clear. About 5 minutes.
Add chicken and continue to cook until chicken is no longer pink. Remove from heat.
Mix in remaining ingredients except 1/2 c cheese, and pour into a greased casserole dish. Bake at 350 degrees for 30-45 minutes or until most of the liquid has been absorbed by the quinoa. Top with cheese about 10 minutes before it’s ready, and continue to bake.
The next few weeks will feature a lot of meals with chicken. Vons and Albertsons had Boneless, Skinless chicken breasts on sale for .99/lb (limit 10 lbs) on Friday. Of course, I picked up 10 lbs. I then spent an hour cutting up the meat, as it was whole breasts. I prepped 10 ziploc freezer bags, some with spices or marinade. We’ve now got 10 meals worth of meat prepped! Yes, I did use the kitchen scale to make sure that each bag was as close to 1 lb. as I could get.
I’m just posting dinners for our meal plan. The kiddos lately have been having protein pancakes (I like Kodiak Cakes mix- it’s yummy and very versatile) with butter and Peanut butter. Hubs likes Oatmeal (my recipe for an easy almost instant oatmeal mix can be found here) if he’s got time, otherwise he and I have protein shakes. We mix it up, and have different flavors and mix in all kinds of stuff into our shakes, so as not to get bored. Here area few of our favorite recipes.
Lunches for Lil’ Man are usually Peanut butter and crackers, fruit, milk, a protein muffin (aka a kid cupcake), and applesauce cup. He takes his lunch every day! Hubs usually has a protein shake or I pack him leftovers or a frozen entree.
Bitty Bird and I usually have leftovers from the night before, or soup, sandwiches, quesadillas. She eats almost anything!

The menu may change, as I pull stuff out of the pantry to rotate what we’ve got (I am trying to cut down on waste, and put the older stuff up front to get eaten first). My birthday is this weekend, so we may be using up a lot of my birthday freebies as we are in the vicinity of deals.
We live pretty close to a Round Table Pizza, and I love their crust. It reminds me of sourdough bread.
