We survived Thanksgiving break. Now it’s back to school, and back to work!

I did not go to the grocery store last week, other than to pick up milk. So last night I hit the store to stock up- The pantry was pretty bare. I ran out of flour- and for someone who bakes a lot.. well, I was pretty shocked.

This week we’re relying on a couple meal prepped items from the freezer, they come in so handy, especially on Mondays when we have so much going on. The big kid has a 2-day research study this week- he’s so excited!

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

I’ve gotten a pretty good inventory of the pantry, freezer, and fridge done (I update it after every shopping trip), so I’m able to plan meals and use up what we’ve got with little waste. If you are looking for kitchen inventory printable, I like the kitchen inventories here. They are great printables.

You may notice a lot of plant-based meals- We are not vegetarian (well, the big kid is, but the rest of us aren’t), but I am trying to get more veggies into our diet. I do a lot of cooking from scratch- I find it easier to get veggies and fruit into recipes that I can have 100% control over.

I only post our dinner plans for the week, because our other meals are usually the same each day:

Breakfast: Coffee with 1/2 and 1/2  for me, and pancakes or something along those lines for the kids (they love the Kodiak Cakes Mix).  I also keep sandwich Ziploc bags of other frozen fruit on hand to make the kids smoothies when they request them (a few times per week). Berries, peaches, and mangos are pretty popular.

Lunches are leftovers, salads, or soups for me and Bitty. The big kid takes his lunch to school, but once in a while, I can convince him to buy his lunch.

For dinner, when we’ve got busy days (like Mondays), I’ll try and put something in the crockpot in the morning, or pull something I’ve already prepped out that can be quickly cooked. We’ve got a bunch of stuff in the freezer, as I’ve been portioning out 2-3 adult-sized entree portions from several meals a week and freezing them for later meals.

  • Monday: Chicken Fajita bowls with rice, beans, grilled onions and peppers
  • Tuesday: Baked Ziti & Steamed veggies
  • Wednesday:  Butter Chicken, jasmine rice, and green salad
  • Thursday:  Soup (we have a couple kinds in the freezer), Grilled cheese sandwiches, and apple crisp
  • Friday:  Breakfast for dinner: Corned Beef Hash, poached eggs, toast, and fruit
  • Saturday:  Pizza time (also salad will be served)
  • Sunday:  Pulled Pork, baked potatoes, steamed veggies

I had someone ask me how we always have enough of anything for leftovers. I always cook enough of the main dish for 6-8 servings, that way we have leftovers for lunches later in the week or leftover night. And really when you make stuff like soup, it’s hard to make a batch of soup that only feeds 4 people.

11/25/19 Weekly Meal Plan!

This week is Thanksgiving here in the US, so the kids are off school all week, and I’ve got tons of fun stuff planned! Zoo, making Turkey Cookies with the kids and my niece, playing at the park, and of course, daily visits to the YMCA. Meals will probably be light because we’re super stoked for all the yummy treats on Thursday.  I’m taking this dish on Thursday!

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

2019 Holiday Resources

I usually do this post later in November, but I’ve been getting a lot of requests for information for 2019.

The holidays are more than food and gifts, but no one should go hungry any time of year!

Here is my post with a list of food banks/pantries in San Diego. Many of the food pantries also have special holiday distributions, it is worth a call to find out of any additional food or gift distributions will be done.

As of now, I am not aware of any free Christmas tree giveaways, however, as I gather more information, I will update this post.

One free toy will be given to all children attending the event ages 0 – 11. Free lunch will be provided in addition to free entertainment, kids activities and giveaways. All three locations have free groceries and one location has free gently used clothing available.

You can download and print forms, check into eligibility (it is income-based and they are very strict from what I’ve been told), and see what forms you need addition to the application here.

 

The intake dates are November 21 or December 3, 2019 from 6:00 to 8:00 p.m. at Rio Seco School on Cuyamaca St.

Representatives will be there to assist you in processing your application.

Once again the ladies of the  American Veterans Ladies Auxiliary Post 534 are working with the VFW in Lakeside to host a super fun event for kids age 0-11.

In addition to meeting Santa, there will be crafts, snacks, and lots of fun!

YMCA- Free To All on 6/16/19!

Ya’ll know my family loves the YMCA! Between the great child care, clean pools, excellent group classes (I love yoga!), I am stoked that All San Diego County YMCA locations are open and free to all this coming Sunday, June 16, 2019.

The location closest to us, the Cameron Family YMCA in Santee is opening it’s newly redesigned Fitness center this Saturday- I can’t wait to check it out on Sunday morning! If you join in June, there are all kinds of deals, including no enrollment fee (a $50 value)!

Recipe: Kitchen Sink Chip Cookies

It’s finally winter in San Diego! It’s rainy, cool, and we even had an awesome thunderstorm this afternoon. Cooler weather means that I can turn on the oven and get cooking!

That’s a lot of cookie dough!

I made these cookies for the first time last weekend for a Cast Party. They were so well-received (read, I think only 3 came home, out of the 3 dozen I made) that I knew I had to make them again.

So why Kitchen Sink Chip? You can use whatever kind of chips or candy you’ve got. Everything but the Kitchen Sink. The first time I used peanut butter chips, butterscotch chips, and M&M’s.  This time, I used butterscotch chips, semi-sweet chocolate chips, and M&M’s to accommodate a friends peanut allergy. Additionally, you could use white chocolate chips, dark chocolate chips, milk chocolate, speciality holiday chips, M&M’s (of any variety), or any yummy candy- I got Andes Mints pieces to put in my next batch. Whatever sounds good to you.

 

 

Ingredients:

  • 4C. AP Flour
  • 2t. Baking Soda
  • 1t. Salt (I use pink salt)
  • 4 eggs
  • 2C. softened butter or shortening or coconut oil (or some combination of two or more- I use half butter and half shortening)
  • 1C. white sugar
  • 1C. brown sugar, packed
  • 2T. Vanilla
  • 1.5C Chocolate Chips (or whatever kind you like)
  • 1.5C. Butterscotch Chips (or whatever kind you like)
  • 3 oz box M&M’s- movie theatre sized box (or whatever kind of candy you like)

Directions:

  1. In a medium bowl combine flour, soda, and salt. Set aside.
  2. In a large mixing bowl, cream butter and sugars.
  3. Add eggs, one at a time.
  4. Add vanilla.
  5. Using mixer on low, slowly add dry mixture to wet mixture.
  6. Once two mixtures are completely combined, add chips/candy one variety at a time and mix well.
  7. Drop spoonfuls of dough on greased cookie sheets or cookie sheets lined with silicone baking pads.
  8. Cook in a 350 degree oven. You can adjust the size and baking time, depending on the size cookie you want. I used rounded tablespoons and it took about 12-15 minutes in a 350 degree oven.  If you make them smaller, adjust cooking down to 8-10 minutes.

Tablespoons: 2 dozen large cookies

Teaspoons: 4 dozen smaller cookies.

These cookies are dead simple to make. You can make adjustments as needed: 1 for 1 gluten free flour for AP flour, Sola or Splenda for white sugar. I like that these cookies are not overly sweet. They use approximately 1/2 cup less white and brown sugar than other cookie recipes. I think that and the salt help the flavors of the chips/candy pop.

2018 Holiday Resources For Those in Need

2018 has been a hard year for so many families. Thankfully there are many local groups that are offering help to neighbors in need.

unnamed (1).jpgMeet the Need at Faith Chapel is giving away 100 6-7 foot Christmas trees this Sunday, December 2, 2018 to the first 100 people who register.

If you desire a tree, plan on coming to Faith Chapel to register as early as 8:30am. Trees are limited to the first 100 registrants. Bring tie downs or whatever else you need to take a tree home with you.  From their email, “Meet The Need will be held at the Faith Chapel Activity Center at the top of the church property beginning at 1:00pm. There will be lots of fun activities and a wonderful Mexican Themed meal!

Registration for Meet The Need will be held in the church lobby at the top of the campus in the main foyer. Registration will begin as early as 8:30am and will be open till 10:30am. We only have 100 Christmas Tree’s, available for the first 100 registrants that want a Christmas Tree. So if you want to guarantee yourself a tree, show up as early as possible.

And if you are in a position to help out, please consider donating to your local food or toy drive. Many grocery stores have red donation barrels, schools are doing canned food drives for their local food banks this time of year too.
