I realized the other day when searching for my chili recipe on my blog so I could share it with someone on Facebook, that I have not posted my chili recipe, ever! Which is weird, because I make it at least once a month.
What I love about making chili in the crockpot is that you can use either fresh, frozen, or canned veggies, it really depends on what you have in your house, and what your budget is.
Because I get vegetables and fruit twice a month at our local co-op, frequently I will have fresh vegetables that I have diced or prepared and put into Ziploc bags to store in the freezer. It ensures that we have nutritious vegetables with no additives at our fingertips throughout the month.
Another great thing about this chili recipe is you can make it vegetarian, you can put meat in it, or you can make a vegan! This recipe is naturally gluten-free.
1 pound of meat (optional) I usually use ground pork, but other good choices include ground beef, ground chicken, ground turkey, or bite-sized pieces of stew meat. If you want a meat substitute, I like these crumbles from Beyond Meat.
One can black beans, drained and rinsed
One can kidney beans, drained and rinsed
3T chili powder
1t cumin
Salt and pepper as needed
Optional, but delicious:
1 cup corn niblets. If you use canned corn, drain and rinse it prior to adding.
If you do not care for black or kidney beans, you can swap in Northern beans, or navy beans.
Directions
Personally, I like to brown the meat on the stove prior to adding it to the slow cooker. In a heavy-bottomed saucepan or Dutch Oven, heat avocado oil and brown meat until thoroughly cooked/browned.
Add onions and peppers, cook until onions are clear and fragrant, about 10 minutes.
Add garlic, and cook, stirring often until garlic is fragrant about 5 to 10 minutes.
If your pan has a lot of brown food remnants on the bottom, I recommend taking 2 to 4 tablespoons of liquid (you can use water) and pour it in the pan stirring and scraping all the yummy brown stuff off the bottom. This is where all the flavor lives.
Pour all of the ingredients from the pot into your slow cooker.
Add remaining ingredients, place lid on the slow cooker and cook on low for 6 to 8 hours.
I love serving chili with cheese, sour cream, and tortilla chips.
This recipe is incredibly versatile.
If you don’t have fresh onions and peppers, you can grab a bag of fajita mix out of the freezer (which is pre-chopped onions and bell peppers).
If you don’t have fresh tomatoes (which let’s face it a lot of us don’t) you can use canned tomatoes. You can use whole canned tomatoes you can use diced, you can use chopped, whatever kind of tomatoes you have in your cupboard.
Use whatever kind of canned beans you have on hand. One time I made chili and I used chickpeas! And it turned out delicious!
If you don’t have cumin and chili powder in your cupboard but you have chili seasoning, use that instead.
I find the chili is a great go-to meal for when you are at the end of the month, and you are low on funds but you have lots of canned goods and frozen veggies.
If you were strapped for time, you don’t have to brown your meat, you can just put it in the crockpot and pour all the other ingredients over top, cook it, and let it cook. Just make sure to break up the meat (if you’re using ground meat) with a spoon prior to serving.

We have smoothies a lot. It’s a good way to get fruit and/or veggies into the kids without any fuss.
It’s important to have a good blender that can handle fruits/veggies and ice. I love our new Calphalon Blender. I received it through one of my review programs.
Copycat Strawberries Gone Bananas (from Jamba): 1 cup apple juice (or milk), 1 frozen banana, 1 1/2 cups frozen strawberries, 1/2 cup ice (or more, depending on how thick you like your smoothies). Blend all ingredients- makes 1 BIG smoothie or 2 kid-sized.
The Big Orange Smoothie: This one is the big kids’ favorite and is a version of one of his Jamba Juice favorites that is no longer on the menu. 1 cup orange juice, 1 cup frozen peaches, 1/2 c. frozen mango pulp, 1/2 cup chopped carrots, 1/2 cup ice (or more, depending on how thick you like your smoothies). Blend all ingredients- makes 1 BIG smoothie or 2 kid-sized.
Green Berry Surprise: The surprise is the spinach. You can’t see it or taste it! 1 cup water & a scoop of protein powder (Or milk of your choice), 1 cup frozen berries, 1 frozen banana, 2 large handfuls of fresh spinach, 1/2 cup ice (or more, depending on how thick you like your smoothies). Blend all ingredients- makes 1 BIG smoothie or 2 kid-sized.
Tropical Freeze: 1 cup juice (I like to mix orange and the pineapple juice from the can if you used canned pineapples until it’s 1 cup), 1 frozen banana, 1/2 c. frozen mango pulp, 1/2 cup pineapple, 1/2 c. frozen peaches, 1/2 cup ice (or more, depending on how thick you like your smoothies). Blend all ingredients- makes 1 BIG smoothie or 2 kid-sized.
The nice thing about smoothies is that you can use fresh or frozen fruit or veggies, any kind of juice, it’s all up to you!
Liquids:
Milk: Dairy, Oat, Hemp, Soy, Almond, or other nut milk. Your Choice.
Juice (Apple, Orange, and Carrot are popular)
Water and a scoop of protein powder

Some of our favorite fruits include:
Bananas (I peel and slice overripe bananas and put them in ziploc bags, so they are ready to use!)
Strawberries- 99 Cents Only and Dollar Tree both stock 12 oz bags of strawberries. If you can’t find them in season, this is a great alternative.
Peaches- I usually buy them frozen.
Mangoes- 99 Cents Only sells Mango pulp, which is just the good parts of mango formed into a brick and frozen. I love mangoes, but I hate peeling and slicing them.
Mixed berries- 99 Cents Only sells mixed berries, which is usually strawberries, blueberries, blackberries.
Pineapple- Either canned in its own juice or frozen chunks. Frozen Pineapple is good straight out of the bag. Fresh pineapple is a lot of work to process just to turn into smoothies.
Tasty Veggies we enjoy in our smoothies:
Carrots- I usually chop them up small so they are easily incorporated.
Spinach- It blends in well and isn’t noticeable.

I found a cache of yummy, frugal family recipes, so I’ll be posting them over the next few weeks.
Most of these were formulated by my relatives to feed a hungry, hard-working family with kids. Everyone in my family is frugal, so these recipes won’t contain any expensive or strange ingredients in small quantities- There is nothing worse than trying a new recipe only to find you only need 2 Tablespoons of an ingredient that you’ve never used before, or worse yet, only comes in a HUGE container/package.
I will try to include the sides that we’ve traditionally served with the main dish to round out the meal.
Chicken Parm Meatloaf (serves 6)
Ingredients
1 lb ground chicken
1 egg
1/2 cup bread crumbs (I use Italian seasoned)
1 tablespoons Italian seasoning
1/2 c. Parmesan cheese
1/4 c. shredded mozzarella cheese
3 Tablespoons onions, finely chopped
1/4 cup fresh white mushrooms, stems removed, cleaned and chopped into bite-size pieces
In a large mixing bowl, combine all ingredients, except for pasta sauce. Mix well until all ingredients are well combined and mixture resembles a meaty paste (about 3-5 minutes of mixing)
Pour into a greased loaf pan, shape into a tidy loaf.
Pour pasta sauce over the top of the loaf.
Bake at 350 degrees for 25-30 minutes, until meat is cooked through. If you are using a meat thermometer, it should read 165 Degrees. I use this one.
I’ve been meaning to post this recipe for a couple weeks, but with summer vacation and the kids needing to see me, talk to me, touch me every.moment.of.the.day….. I’ve been a little behind.
This is so easy, so tasty, and so cheesy. And it works with almost every dietary restriction:
If you are vegetarian but omit the chicken.
If you are Gluten-free, substitute GF pasta for what’s the recipe.
If you are vegan, use your favorite vegan “cheese”. And remember to check the pesto- sometimes commercially made pesto contains cheese!
